What is the proper way to break up a dog fight?

So if you have two dogs and they start to fight how do you break it apart without hurting the dogs or yourself? I've never had to break apart any dog fights but if I somehow found myself needing to I don't know if I would know what to do. I've always just prevented them from happening...
