huskymom Mmmmm Joyce...you know you can make a bunch of those and freeze them, then take out one at a time and nuke them for 5 minutes or so when you don't feel like cooking again.

I made breaded Tilapia fillets with fresh-from-my-garden zucchinni,cherry tomato and onion stir-fry....and I made a pitcher of Mojitos....

Grilled chicken sandwiches with something on the side. I have to see what they have at the fruit market. Any ideas for toppings for the sandwiches? Maybe I will do the Cordon Blue thing??

likely the leftover pasta w/pesto sauce on it that I made last night. My basil plant is huge! That's okay - I love pesto!

I am sitting here eating leftovers from last night's pasta takeout dinner... and then on top of it, I dumped an entire bulb of delicious, home-grown (thanks, BF's mom!) roasted garlic. 5 mouth-watering cloves. YUM!!!!

Have you tried roasted garlic? If it's roasted, particularly if it's a mild variety of garlic, it takes the "bite" right out of it and makes it super mellow and smooth :) So good!! I could eat it plain!

There's no way I can actually make myself cook more than a couple of nights in a row, so tonight I'm going to toss a bag of Schwan's fried rice in the microwave and some frozen Tempura shrimp from Costco in the oven.
