what's for dinner?

    I'm the same way.  BF is going out of town this weekend for a hockey tournament, and I'm soooo looking forward to not having to cook while he's gone.  When it's just me, I usually do either a microwave dinner, a DiGiorno pizza, or take out.

    Doing a BBQ for my two girlfriends and I tonight. Grilled portobello caps for me (vegetarian). Grilled marinated chicken legs for the girls. With a side of grilled zucchini with melted cheese and grilled lemon potatoes.

    last night I made that chicken/bacon meal in the oven (thanks Jackie), with rice & brocoli and it went over well.

     

    I wrote that recipe down and plan to make it this weekend.  It sounded so good.  I wrote down Heather's chicken recipe too.  Never enough recipes for those darn skinless chicken breasts.  Cluck, cluck.

    We're having leftovers from last night.  I put a round steak in the crockpot (browned it first) chopped up a small onion, half a green bell pepper, large can of tomatoes.  It's easy and good.  My kind of cooking.  I really do like to cook but I do my more time consuming cooking on the weekends.

    We are having left over rotisserie chicken, fresh corn on the cob from the neighbors garden, sliced cucumbers, fresh catalope and honey dew melon for desert.   Light and cool for us tonight it hot & humid and been one h*** of a day!!!!!

    That sounds yummy.  I'm feeling lazy this evening and am debating just ordering a pizza, even though I really don't need the calories...

    I actually just got back from the grocery store.  We are having chicken fajitas tonight!  We haven't had those in  longgggg time. I should go make dinner actually, and by make I mean wash dishes after fiance makes a mess.  hehe.

     Last night we had boneless pork chops with sweet chili sauce, mashed sweet potatoes with coconut milk and grilled peppers and zuchini on the BBQ. It was pretty delicious :)

    Here's a variation you can do for that recipe.  Add a packet of fajita seasoning to the crock pot.  Serve over rice and top with sour cream and melted cheese.  YUMMY!!

    I think I'm having mac 'n cheese.  DH is working.  I am cleaning the basement, the nasty kind of basement (cement).  We're leaving tomorrow for a 2 week vacation so there's really no food in the house.

    I had a good lunch though.  The cafe made this interesting grilled panini.  It had a chicken breast, swiss cheese, guacamole, and cucumber.  It sounded bland (I like flavor or at least salty) but ended up being really really good.  They like to do weird experiments in the summer.  I give this one two thumbs up!  The last one was some speciality grilled fajita and it tasted good but made me sick, lol.
