    The kids and I just put together a couple of pizza's and they're in the oven....they were very proud of their work. Here's to hoping it tastes okay LOL. Broccoli on the side!

     Girls night out! My friend turns 50 today and tomorrow she is heading done to Florida for 3 months to apprentice with a dog groomer.

    Stuffing-crusted chicken (see Pg 2 of today's Mindless Chat thread for recipe), corn on the cob, side salads.  It was yummy!!!

    And some cherry cordial Hershey kisses for dessert.  I'm terrible, but they had them at the grocery store today, and I've never seen them except for at Christmas time, so I had to buy them. Wink

    Chicken bruscetta...basically grilled chicken breasts with a tomato, onion, and basil topping (think Italian salsa) and salad.  It was good, got to use my tomatoes from the garden.

    100 grand bar for dessert!!!

    I went and bought all the ingredients to make bacon-wrapped chicken in a sour cream sauce - but my sister has no crock pot.  Any cooks out there know how to turn a slow-cooker/crockpot meal into something I can bake in the oven??  Here's the recipe: http://busycooks.about.com/od/chickenrecipe1/r/sourcrbacchix.htm

     If you can seal the container you use to bake in well, you can just set the oven temp lower than normal.  Add a bit of extra moisture too.  Or you can cut the time down and turn the temp back up to normal. 

    I made a pork tenderloin in the slowcooker with potatoes and carrots in a mushroom gravy.  Was pretty good.  Next time I'll omit the extra salt though.  Kelci and Kale loved it though.

    Paige, I would just do everything just like the recipe calls for but put it in a roasting pan or casserole dish and cook it at 350 degrees,covered with foil,  for about an hour.  Check for doneness but it should be done in that time.  Preheat the oven.  If you were going to eat it tonight, the crockpot version wouldn't be ready for 6 to 8 hours, so I would have done it in the oven.  Sounds delicious!

    Yeah, I bought it all last night and went looking for the crockpot last night to make sure it was clean from the move when I realized, whooops- she doesn't have one.  For the woman who does SOOOO much cooking and has so many kitchen utensils, appliances, etc, I was surprised.  I almost never cook, but I thought for sure, there's got to be a way to cook this like a casserole.  (Most of the meals I make are one-dish meals like casseroles or crockpot meals, and these seemed like things that could bake just fine.) YAY!  Thanks so much Jackie!!  I'll try it tomorrow and let you know how it comes out.

    I have had family at my house since Friday night...with all the cooking I did for a huge party Saturday and then we grilled Sunday, we ordered Chinese last night while the guys went to check on the land and tonight we had Whataburger since they were back and not in the mood to grill!  It has been a long time since I had Whataburger and it was very yummy!

    I made beef burritos.  Yes,  you read that right.  I made them - didn't snag them out of the Costco freezer or from Schwan's. Big Smile I browned l lb. of ground beef and stirred in a cup of chunky salsa, a can of drained black beans and a can of mexicorn, added some water w/lime juice and some rice and simmered it for 20 min., then stirred in a couple of handfuls of shredded cheddar cheese.  Put a big glop in the middle of some tortillas, topped them w/sour cream and rolled 'em up.  Nuked them in the microwave for about 1-1/2 minutes. That was a pretty major accomplishment for someone who would rather have a root canal than cook Smile if I do say so myself.

     Mmmmm Joyce...you know you can make a bunch of those and freeze them, then take out one at a time and nuke them for 5 minutes or so when you don't feel like cooking again.  Those are one of the things I make in big batches cause they don't really take any more time to make 25 then 6, other than the rolling part.  Then I let them cool, freeze them on a cookie sheet, toss them in a big freezer bag and tah dah!  Frozen burritos for a month!
