Whats for diner??

    Well since I had to work tonight until 11:30 finishing up people's taxes, I will tell you what we had last night.[:)
     
    T-Bone steaks cooked rare, sweet potatoes, grilled corn on the cob and a mixture of okra and diced tomatoes heated up together.  My steak was TO DIE FOR!!!  DH makes a mean steak I tell ya!

    Tonight I made cheesy potatoes stew it's something I just threw together the last minute thing with chicken and broccoli as well.

    Who knows what tomorrow will bring since the only thing left is Blue's chicken leg quarter, his last two ribs, ice cream, and some questionable meat.  We need to get some meat in the house.

    one of my cousins came over and cooked dinner (i did help somewhat though)
    she gets creative in the kitchen.. she made something called Tater Tot Casserole. which is.. obviously.. tater tots on the bottom, lots of shredded mozzarella  cheese,  sharp cheddar, cubed, hamburger lightly browned, *baby portabella muschrooms, bell peppers, canned diced tomatoes, one real tomato, those green straw onions (what they called again?)

     and then everything goes into the oven... not sure for how long though. everything is pretty much already cooked. i guess long enough to melt the cheese and make everything hot.

    when she first told me about this i cringed.... i am very finicky when it comes to certain foods mixing together, but this was actually pretty good.... there was also steak on the side. which... could have been better but oh well. i usually let my husband cook the meat.. especially red meat. she forgot to season the steak, but no bother. nothing a salt shaker couldnt fix.

    my husband and i are usually pretty nutty in the kitchen. we're both artists and cooking is just another canvas. even when i was working full time it was fun to plan dinner. i used to snag recipes from my coworkers all the time :D

    right now this thread couldnt have come at a better time. i'm burned out on chicken, pork and fish.... and thats all we have, except for one package of hamburger, and i dont want spaghetti.... or hamburger helper...
    maybe i'll get some ideas from here on what to do with this stuff..... i am mostly a red meat fan.... or seafood... i looooove shellfish especially.

    So Tuesday is Mexican nite?  And, Cathy, of course!
     
    The thing that I really miss about CA is the great Mexican food.  Most of the "Mexican" places are dolled up Taco Bell type food.  A new place opened not long ago...called Agave...which is supposed to mean something that escapes me, and wow, it's like being back in CA!!  The owners, the staff, all are Mexican and the food is pretty danged authentic!  So, it's cool to have a good place for Mexican food without having to always cook it myself!  I'm a pretty darned good cook, but I'm still white bread as can be, and not REALLY able to do great Mexican food....just good! [:D]

    Glenda - is this place near your neck of the woods?  When DH and I are up visitng his parents at Torch Lake there is no good mexican food and we just die!!!  We are spending some time up there this summer with the new munchin and a new place to eat would be great!

    "Carne asada" would be "grilled steak" that is basiclly any kind of steak on a grill, the one i cooked is a special one that is really tender, really famous at the north of Mexico [:D]

    I took out some stewing beef for tonight, any ideas on what to do with it? I don't really feel like having stew.

    LOL.  I know it.  I haven't seen her around today.  Maybe she took that "under the desk job" she CLAIMED she was offered and is, at the moment, indisposed.  [:)]

    Well, first, I wouldn't buy stew meat.  It is generally low quality and will be tough unless it is cooked for a long time.  Your options, I think, are limited.  I wonder if you could slice it VERY thin and do a stir fry??

    if you crockpot the stew meat you can do anything... stroganoff or whatever... just cook the hell out of it and it will be tender

    Too funny, I am cooking stew meat tonight myself. I use an electric skillet though. I season (salt & pepper) and then lightly brown the meat. Mix 1/3 c Worectershire sauce with about 2/3 c water. Pour over meat and reduce heat to around 200-250 degrees and cook one hour. You don't want the heat high enough to boil the pan dry. I serve with rice (or pasta) - the sauce makes a nice clear "gravy." I think I'll do fresh steamed broccli with it tonight.
