Please give the source when you quote someone.  In your post I couldn't tell whether some of the text was yours or whether it was a quote from Dr. Dodds or Dr. Buffington.

The article was in the Whole Dog Journal June 2003 Veggie Dogs

The article said young and growing but she was especially concerned about fast growing large breeds Tony Buffington DMV was talking about dogs when he said all meat and vegetable proteins are broken down in the gut into amino acids ; its the amino acids that are absorbed.( I quote he said it does not matter where the protein comes from) When he is talking about the vegetarians being good at combining the foods to create a complete protein it is because we are the ones home cooking for our dogs

Please note that a dog's short, carnivore digestive tract means that it does not breakdown and absorb nutrients (like amino acids) from vegetation nearly as well as it does from animal protein.  Efficiently absorbing nutrients from vegetation requires a longer digestive tract.

Whatever else you do I strongly encourage you to supplement your problem dog's diet with raw heart and with digestive enzymes.  The other dogs should be handle to handle a raw heart supplement without digestive enzymes.  This would give you absorbable taurine and L-carnitine.

Here is an article about controlling gas:  http://www.peteducation.com/article.cfm?c=2+2090&aid=253

Have you tried everything in that article?  Those suggestions might at least allow you to feed a small amount of raw heart to avoid developing heart problems.  With luck that small amount of meat won't produce too much gas.
