Tony Buffington DMV was talking about dogs when he said all meat and vegetable proteins are broken down in the gut into amino acids ; its the amino acids that are absorbed.
Please note that a dog's short, carnivore digestive tract means that it does not breakdown and absorb nutrients (like amino acids) from vegetation nearly as well as it does from animal protein. Efficiently absorbing nutrients from vegetation requires a longer digestive tract.
Whatever else you do I strongly encourage you to supplement your problem dog's diet with raw heart and with digestive enzymes. The other dogs should be handle to handle a raw heart supplement without digestive enzymes. This would give you absorbable taurine and L-carnitine.
Has your problem dog been tested for pancreatic insufficiency? http://www.peteducation.com/article.cfm?c=2+2103&aid=331
Here is an article about controlling gas: http://www.peteducation.com/article.cfm?c=2+2090&aid=253
Have you tried everything in that article? Those suggestions might at least allow you to feed a small amount of raw heart to avoid developing heart problems. With luck that small amount of meat won't produce too much gas.
