    The soup party at my place continues - Curried Squash with a dollop of sour cream/cilantro mix.  I'll probably have some crusty bread and a bit of pate with it.

    That or I might go to Amanda's place - love me some asparagus!

    It's Ash Wednesday - so no meat for us.  Tuna Noodle Casserole...it's a tradition.

    I took 1 lb. ground beef out of the freezer this a.m.  I already have some frijoles and ro-tel in the pantry, so I stopped at the market for tortillas and cheese and popped into the Taqueria for a carton of Spanish rice and we're having burritos. I'm with Cathy!!  First stop Kate's house, then on to Chuffy's.  Anybody fixing anything spectacular for dessert ? We could make three stops. Smile

    That is my favorite soup ever.  I try to not make it too often so DH doesn't OD on it.  He's not real into soups, as in, he won't ASK me to make soup, but heenjoys them when I serve them, so long as it's not an every day thing.

    Wow - some of you are pretty ambitious chefs for a weeknight!  There are a few meals that sound delicious!

    DH has a class tonight, so he had some leftover chili before heading out again.  I rarely cook if I'm alone for dinner, and tonight I'm feeling crummy due to the start of a cold . . . . so I had 3 pieces of pumpernickel toast and a big glass of orange juice. 

    I can't help with a dessert, other than the box of Thin Mint Girl Scout cookies in our pantry . . . . I'm happy to share those, served with a big glass of cold milk!  Stick out tongue

    Oh boy, I cook by taste, texture and appearance, and don't really follow a recipe, but.....

    taters, green onions (tops included) and salt

    once everything is cooked and drained I add milk, fresh chopped parsley, some diced ham, just a sprinkle of instant mashed taters to thicken a bit, Natures Season (my salt and pepper) and the secret ingredient is a pint of fat free 1/2 and 1/2...gives it a nice rich and creamy texture and flavor.  And then I let it simmer for a bit so all the flavors marry.   DS and I love cheese in it, but DH isn't a cheese freak either, so we just add our cheese to the bowls.

    And I should say, everyones dinner sounds yummy.  But, I'm not giving up my tater soup!  Not even virtually!

     LOL everyone who wants nachos is welcome at my house, sans guacamole for Chuffy.  There's leftover chili today, I might have that for lunch. 

    Dinner tonight is mussels in garlic sauce, chips (french fries to most of you LOL) and I think some steamed broccoli because I have a huge head of it in the fridge that needs eating.

    Glenda - I'll try that soup recipe! I put in potatoes, onions (sweet onions, because that's all I had), chicken broth, carrots, half and half, and some herbs. It was fine, but definitely lacked body. Next time I'll add some green onions and/or leeks!

    um - dinner depends if fiance is coming home or going skiing. if he will be home, he's been talking about making a chicken pasta with white wine cream sauce. if it's just me, I think I will bbq some chicken with a piri piri sauce, roast some potatoes with a variety of spices, usually chicken spice, curry, chilis, cayanne, salt, pepper and a bit of cinnimon, and steam some asparagus.

    Sounds like you and I cook alike Glenda, and I love me some soup but DH really couldn't care less.

    I make my potato and leek soup by sauteeing leeks and onion with a incy bit of garlic then adding a tbsp or so of flour to start a rue.  Add stock to the rue and bring it to the boil and then add peeled potatos, chopped as if you are making mashed potatos.  When the potatos are cooked through and crumble to the touch of a fork I take a stick-blender to the pot and puree the whole thing.  Add some S&P to taste and voila!  I don't add the cream or milk (whatever is in the fridge) until it is being served and then I make a little puddle in the bowl.

    I am having leftover shrimp enchiladas for lunch today with avocado cut up on top of them.  They were so good for dinner I can't WAIT to have them again for lunch!

    Tonight, if I get home at a decent time, hubby will grill some pork chops and I will make some brocolli and either baked beans or mac & cheese.  Otherwise we will have that tomorrow night.

    All this talk of potato soup is making me REALLY want some!  I LOVE potato soup and don't get it often enough...that was one of my favorites when I was pregnant since I allowed myself the extra calories!
