    Potato Salad

    Since we are talking about food lately, I am having a party at my house this weekend where we are serving brisket, sausage, baked beans and some sides. Probably some deviled eggs and maybe some asian style green beans (long story). The guy doing the food was going to make some mustard potato salad for me but he ended up getting called down to Houston to work b/c of the recent hurricane and that is the only thing he couldn't make ahead...he did throw in some ribs though to make it up to me.

    Anyway, I make a good potato salad but I am wanting something different. Anyone have a really good mustard potato salad recipe that people always rave about? I cook often so it is OK if it is complicated and fine if you just post approx ingredients size...I tend to wing measurements anyway.

     It's not a mustard one, but its nice.... my MIL makes it.  Some baby potatos (new potatos? charlotte potatoes? little ones with the skin on) boiled and then while still hot stir in freshly chopped red onion, hot dog sausages and a big blob of mayo.  Really easy and tasty.

     I've never tried it with sausage, but to Chuffy's recipe, I would add sliced celery and green onions, and add some lemon juice and celery seed to the mayo.  I imagine you could add some mustard to it if that's what you like.

    I've never heard of "mustard" potato salad, but I use mustard with the mayo when I make mine. I'd say I use about a 1:4 mustard/mayo combo, and I'll put some dill seed in there, garlic salt, salt, pepper, parsley flakes and anything else that pops out at me. I use red potatoes and I like to dice them into cubes before I cook them. I also use diced red onion, celery, dill pickles and hard boiled eggs. I sprinkle a little paprika on top when it's all done. I don't know if people are just being polite or not, but I always get compliments.

    My Mom makes a great one....not sure on the recipe, we just eye-ball it around here....

    Baking potatoes(we go with 5lbs), Mayo, Sweet onion(called Vidalia Onions to some...maybe its a southern thing that we call them 'sweet' LOL), Mustard, and celery.

    Boil the potatoes, cool, then cut into small(1/2-?) cubes, cut onion and celery into fine peices(she does this b/c I dont like onion), add to bowl, add mayo and mustard.

    I would add a little at a time if your not sure on the recipe, and then taste, add some more of whatever you like....

    Add some pepper too!

    EDIT : I got it backwards, cut the potatoes, then boil, not really much of a need to cool that way

    My family is not big on Mustard Potatoe Salad but I am always asked to make my potatoe salad, family and friends seem to love it.  

    Boil - peeled and cubed russets til tender (almost as tender as you would for mashed) for large family event I do a full 5 lb bag.

    1/2 dozen hard boiled eggs, chopped

    finely chopped green onions and bell pepper in proportion to the 5lb bag of potatoes.

    Garlic pepper and salt to taste

    Kraft Mayo lots of it

    I mix the Garlic pepper and Mayo with a tablespoon or 2 of mustard (not heavy on the mustard) I add in the onions and peppers next.  I drain the potatoes add them to the mix then last I add the boiled eggs.  The potatoes being so tender give it a kinda chunky kinda mashed texture.

    Dad and Hubby like it best fresh made and warm, I like it just as well chilled.
