    Recipe Exchange?

    I'm trying to do more cooking (and doing my own modified version of OAMC, once a month cooking) - anyone here interested in exchanging tried and true recipes?  I'm not the greatest cook, but I'm not terrible either :)  I do LOOOVE collecting recipes (with every intention of trying them out of course cough cough) and particularly like sharing good recipes with others.  

    Also would like to exchange cooking tips too! 

    For instance if anyone has a good method of cooking cube steak that doesn't include deep frying it in flour or using cream of mushroom soup I'd love to know - it's a cheap cut of beef, but I haven't a clue what to do with it!

    Later tonight I'll post two yummy soup/stew recipes that I learned to make over the weekend - one of which you can serve inside a pumpkin :)

    Sure, I'll share recipes.  This is the time of year that I absolutely love to cook huge pots of stuff and get my freezer stocked to the brim.

    I'm in, I'm trying to cook more often.  I'm going to be making my most favorite, tried and true curried pumpkin soup.  I only know how to make it by memory, not sure on the measurements so when I do it this week, I'll be sure to measure everything and then share.  It's perfect for this time of year when there's fresh pumpkin but can be made with the canned variety as well.  It's really good to serve in the small pie pumpkins for a beautiful, special thanksgiving soup.

    I LOVE, LOVE, LOVE curried pumpkin soup and that was one of the soup recipes I was going to post tonight. I have tried multiple recipes and my favorite for many years now has been from Kitchen Witch. Here is the recipe in case it helps you with your measurements.  I would love to know how yours varies from mine.

    I tend to eyeball a lot - also I usually double up or triple in some cases what the recipe calls for in spices.  MMMMM curried pumpkin soup :)  I looove pumpkin.  

    Baking recipes definitively welcomed :)  I'm not much of a baker - but I do love to try my hand at it.  My last batch of cookies actually came out great - I'll have to find that recipe to share.  

    I'm really trying to save $$.  Eating out is expensive and we do far too much of it.  We're also on the run a lot - so I like being able to throw together quick meals or using my crockpot.  My crockpot, stockpot, and wok are my favorite cooking items.

    Will do Cathy!  I have to type them out though but will try to do that in the next night or two. My 3 standard favorites that the whole family loves are that curried pumpkin soup, a crab bisque with sherry and puff pastry I make and avgolemono (greek lemon chicken soup) that I happen to be eating for lunch today.   I have a couple others that I make when I have more time to prepare food and that is a Vichyssoise and a Fresh tomato soup au gratin. I will for sure get the “standards” in my house up and if I get a chance type out and post the other two.

    OH.. and speaking of “fall foods”.. I have a couple I must share. We are having a fall party this weekend in the mountains and I recently found this recipe and am in love with the brine and fall seasonings on this pork tenderloin. I haven’t made the curried pumpkin rolls to serve it one, but I did serve the meat as sandwiches on really soft yeasty store bought rolls and they were amazing. It also goes really well with caramelized onions.   I plan to experiment with some sort of special herbed gravy maybe with apples or cranberries in it too in order to serve this meat as a holiday dish this winter for family. But for this weekend I am cooking it again as sandwiches.

    I love crockpot recipes!  One of the easiest things you can do in a crockpot is barbecue.  You can get a pork shoulder, or even use boneless skinless chicken breasts.  I use whichever is on sale.  Just pop the pork shoulder or 4-6 b/s chicken breasts in your crockpot, dump a bottle of your fave BBQ sauce all over, and cook on low 8 hours.  Then take it out and pull & chop!  I usually stir in a little more bbq sauce to the chicken after it's chopped, because it's leaner, so it tends to be a little more dry than the pork.  Serve with any side dishes you like.  Easy, peasy, and cheap, esp. if you can find the meat on sale.

    I love the crockpot too. A recipe that DH started making when he's at the firehouse has become a favorite of ours. It's our version of Chile Verde. You cook a pork roast (any kind will work, but the cheaper cuts actually work best) in the crockpot for  4 or 5 hours with a little veggie broth or water. Take the roast out and dump the liquid out. Cut any visible fat off the pork and then using 2 forks, shred it. In the crockpot, add one diced onion, 2 cans of tomatillos, 2 small cans of  diced chiles (hot or mild is fine), and a jar or can of verde salsa. Toss the shredded pork back in and let cook another few hours. We serve it in tortillas with some cheese and sour cream.

    Cathy that Chili Verde looks great!  I love chili verde and have tried one or two recipes before and been disappointed. I will give that one a try. I think it’s a perfect weekend RV one!

    My FAV. trick....if your making a cake or brownies, add Apple Sauce instead of oil, same ammount that it calls for, just apple sauce instead of oil. It's **much** healthier, tastes *great* and makes cakes and brownies 'flater' so they're easier to icee.
