Two of the Seuss books that get read a lot in our house are My Many Colored Days (about how different days/times people feel different and all the moods are okay) and Oh the Places You Shall Go (how much fun and rewarding and exciting life will be except sometimes things won't be so great). Great messages for adults. My two year olds like Go Dog Go.
For non-Suess, the favorite is Eric Carle's Brown Bear What do You See? The there are a series with gorgeous pictures, I am a Bunny, I am a Puppy, I am a Kitten. And the Boyton books Moo, Baa, LA LA LA and The Going to Bed Book. My son (who has mild cerebral palsy) still loves any of the touch and feel or sparkle books.
For videos, they watch Signing Times. There are a dozen or so in the series. They teach kids American Sign Language. but to me more importantly, show kids with varying abilities (disabilities), kids of different ethnicities, siblings getting along, and have just totally awesome messages and catchy songs. My favorite song teaches the signs for Please, Share, Your Turn, My TUrn, and My Turn. No idea why a mother of toddler twins would like that song
