    School Lunches

     Does anyone have some good ideas for school lunches?  Kale is not big on any sandwiches other than PB&J, which he of course can't take to school.  So it has to be things that are nut free, and also don't have to be heated up, as they aren't allowed to have a microwave at school.

    As another point, he's an extremely slow eater so the more calorie dense, the better.  

    Some of the things we already do are:

    • Cheese and Crackers
    • Cold Pizza
    • Jam Sandwiches
    We also do things like leftover chicken or whatever, but we don't always have that on hand.  And if I'm getting bored with his lunches, I'm sure he is.  FTR, he gets a piece of fruit and another snack with his lunch as well, and we don't have much of an issue with that, just main dishes, if you will.

    How about pasta or potato salad?

    Jackets.  What I do is I cut a jacket in half and scoop out the middle.  You can mix it with tuna, or chilli, or cheese and bacon or something, then stuff it back in the skins, top it with cheese and grill it.  Can be eaten hot or cold and its filling.  You can also make it as healthy or calorific as you want Smile

     Sorry.  Jacket potato.  You know, baked?  When we have them for tea I make an extra one or two so I can make these thingies ^ ^ for lunches Smile

    *snickers quietly to her self over the Culture Clash* I got a mental image of some kid eating his jacket stuffed with cream cheese and pulling a zipper out of his teeth. Lol.

    I don't even have a potatoe! *cries* This sucks! I hate being broke.. I'll probably just make some chicken soup with them. I've got the soup broth somewhere from the last time I was sick.. *hmmm*

    Stuffed potatoes are a great idea.

    When my stepdaughter is here in the summer's and has to take a lunch to camp, we always go the lunchables route so I am going to make suggestions based on what they have as choices.  They are all cold too.  Let's see, they have ones with crackers and meat slices and cheese slices.  hot dogs or corn dogs.  Chicken tenders that were already cooked.  cold pizza.  chips with cheese dip.  You could get a lot of those things in the frozen section and cook them the night before then pack them for lunch.  You could also do wings. 

    With Kortnee we always add in a piece of or can of fruit that she likes, a dessert like a fruit roll up and a drink.

     What about something like sunflower butter or soy butter? Not every day, but it'd be a no nuts solution to the occasional PB&J.

     

    I like to take a pack of crescent rolls, and a pack of fake sausages (because I'm vegetarian, but even hot dogs would be fine), and make piggies in blankets. I like them fine, cold. If he likes stuff like that, it'd be something different. 

     

    I like cold spaghetti, too, but stuff like that in a thermous would probably stay warm-ish til lunch time, if it was hot when you put it in.

    Tahini makes a good peanut butter substitute (it's sesame butter and I don't think that's a nut .. it's a seed)

     Then roll into hummus?  I love it with veggies dipped in it.

    I used to take mac and cheese or pasta with me for lunch. I usually heated mine up in the morning, and it would be room temp for lunch, which I was ok with. If he'd eat something like spaghettios, those will stay warm enough if heated and put in a thermos.  What types of things does he like to eat, and will he eat them at room temp? Leftovers from dinner could always work if he will eat them without them being hot.

     LOL, well since he's such a slow eater normally, he's pretty used to eating things at room temperature.  We do have a couple of those small thermos things around, so I guess I should use them. 

    About the Tahini, where the heck do you find it in the grocery store?  I've been looking for it forever, because almost every hummus recipe I've found calls for it.  But I can't find it.  We don't have any special health food stores around so I can't look there.  Likewise with the Sunflower butter, though I've never looked for it.  Does it taste like PB?
