If it were me I would call my Vet and tell him what happened just for piece of mind. My dog had gastro issues when a puppy and I changed foods often. Many times if I didn't change it slowly enough his diarrhea would have blood. According to my Vet that RED blood is a sign of lower instestional or colon issues, due to inflammation or irritation of the bowel or rectum. It's the dark blood in stools that should cause alarm. Given that your dog ate alot of chicken I wouldn't be alarmed (but would call Vet to be sure) because the sudden change diet could easily cause the diarrhea, Hench the intestions, bowel inflammation - causing diarrhea, causing a sore bum and blood.
If he is acting fine otherwise, I would put him on a bland diet of boiled chop meat and rice for a couple of days.
