If it's like the one here at WDW or Epcot, they are pretty anal about actually requiring "proof" of vaccinations. Now after a bit of a tiff they DID accept my dog's titers but this was 3-4 years ago. The staff don't really understand anything and, typically, Disney, it depends on the staff you get waiting on you. Either they are "by the book" completely or will bend a bit.
So take a folder with copies of all vax/licenses. If you *don't* have them they will usually allow the dog to be outside in the kennels but not inside with the climate-controlled section.
At one time they used to walk them ONCE a night if you kennelled overnight but you had to pay extra. But during the day they generally REQUIRE you to come back to the kennel to walk the dog. Given how big the parks are, that can be a huge trek if you don't 'plan' for it. Most folks tend to work the park from right to left in a big circle and that can put you at the opposite end of the 'world' (literally) from where the dog is.
