    Ladies and Gents- Light off those grills!

    With temps close to the 90's in Sunny Southern California, I am reminded that it Barbeque season again!  Time to dust off the BBQ that probably hasn't gotten much use over the past 6 months and get to grilling![8D]

    DH and I love this time of year precisely for the fresh fruit, veggies and the barbequing. I also love it because DH gets to share in the cooking responsibilities.[;)]     While his kitchen skills are kinda lacking, he is the best damn grill guy I have ever met.  GOD LOVE A MAN WHO CAN BBQ WELL![sm=bow2.gif]

     
     In our home our favorite grilled foods are:


     Veggies:

    *Grilled artichokes with lemon garlic butter

    *Grilled corn with lime butter

    *Grilled onions… one of the worlds most perfect foods and truly a gift from God… (can't you hear the angels singing just thinking about them?)[sm=angel.gif]

      Fruits:

    *Grilled pineapple

    *Grilled Peaches and nectarines

    *Grilled bananas

      Animal flesh:

     *Salmon, Halibut and Swordfish (either with rubs, maple glazed or with some sort of citrus, onions and caper sauce)

      *Pork tenderloin (with a syrupy thick glaze so that the outside has a beautiful caramelized and slightly charred crust) YUMMY![8D]

      *Perfectly cooked steak of course…. Although this year we are trying to eat healthier which means less steak[&o]   …  BUT it means more BBQ'd fish![sm=clapping%20hands%20smiley.gif]

     
    I am always looking for new ideas for cooking, so I am curious to know what are everyone's favorite items to BBQ?  Please share your favorites![:)]

    One thing defines BBQ..using coals or wood. Using gas of any types negates the BBQ and constitues "outdoor cooking".
     
    I am a purist...I do NOT put any veggies aside from corn on the cob on my grill....MEAT is what it's for. I also love beer butt Chicken...that's probably the best...and nothing better than a nice loaf of French bread on the grill wrapped in foil and slathered with budda'!

    We use to use only charcoal, but two summers ago we traded in our charcoal grill for a large stainless steel commercial gas BBQ. Between always running out of charcoal and it being so damn hot here 9 months out of the year we went with gas. So as not to create as much heat in the house the side burners were MUCH needed.  I miss the charcoal flavor but I love the convenience of the gas and I get my charcoal grill fix when we camp or travel in the RV.
     
      Sara.. beer butt chickie is also known as Beer can chicken… where you actually insert a can o beer in the bird and cook it sitting up.  It is delicious![:)]

      Gina, I have never cooked it.. doesn't it take FOREVER to cook chicken that way??  Do you have a good recipe you don't mind posting?[:)]

    ETA-  I DO really love using wood chips though and they have great smoking boxes for gas grills.. one cannot have steak without jack daniels wood chips on the grill now can they? [;)]  SO anyone with a gas grill who has never tried wood chips and smoking boxes.. do yourself a favor and try them. [:D]

    Ooooo, you just made me so hungry!!!  I love grilled venison and onion kabobs.  We live in an apartment and aren't allowed to have gas grills, only little charcoal ones and we have to go out on the lawn to use them.  But we're moving to a duplex in August.  My husband had a nice gas grill at his college house and just left it there b/c we had no way to move it and nowhere to keep it, so we're scheming to just go steal it back once we move.

    Venison...*salivating*....it's been so long since I had venison...
     
    Shel I will grab my MIL's BeerButt Chicken recipe....her's is DA BOMB...I'm sure it's a standard recipe but there might be some rub or another she uses....I'll get back to ya with it!

    Oh, you poor thing!  Venison is a staple for us.  All the men in my family hunt, so growing up we ate venison 3 times a week and now I can get all the cuts I want from my dad and uncles.  I have very masculine tastes in food and love my venison just cooked enough to kill germs on the outside.

    In one word- Steak.  I love ribeyes, that are cooked just long enough to be warm all the way through! I think my dad refers to this type of steak as "still kicking."
     
    I love beer butt chicken too.  Except that I really love beer, so I usually have 1 can in the chicken & 2-3 more cans being injected into the bird in various locations.

    Been there, done that. I haven't grilled this week because of all the rain. I leave it out on the lawn overnight to let the coals die. But not with buckets of rain coming down, at times.
     
    I don't have my own pic of it yet but here's one from the website. I got the grill on sale for $80 at Albertson's. And I have found that Academy carries the side firebox for it.

    what in the world is "beer butt chicken

     
    We called it Beer Can Chicken. Take a can of beer about half full and place in the cavity of the chicken. Set carefully on the grill. The flavor of the beer and the moisture will give the chicken a unique flavor. Another hint, don't use a bland middle of the road beer. Use one with a strong flavor to it.

    It's beer butt chicken to me.... because it's funnier, and because you shove the can up the chicken's butt...lol The chicken sits upright, at least it did when I had it at my MIL's.

    I feel like the lone ranger here!  I don't like much grilled foods.  I prefer my steak to be cooked in a cast-iron frying pan.  I love grilled porkchops though.  As far as deer goes, I like it in stew and some people make the best bbq deer but otherwise I cannot stomache it[:'(]  It tastes too gamey and I DO NOT eat any type of seafood.  I know, I'm wierd!

    ok, FIRST of all, that's in "cooking light", which i find hilarious and SECOND, that beer they're using- PBR-  the breakfast of champions!!!!  or at least the champions at my house!
