    Spices

    What are the spices that you wouldn't be caught without? I just bought two new spiceracks with 12 jars each. I have one filled with the spices I had just in the refill bags, but before I transfer the already jarred ones I want to know if I'm missing any.

    Salt, ground black pepper, white pepper, garlic powder, chili powder, orange zest, lemon zest, lemon pepper, paprika...that's all I can think of off the top of my head

    Ok, my list is gonna be a bit long.. I have a built in spice rack in my kitchen with about 50 spices all in alphabetical.. so I am kinda spice freak but I will try to narrow my list for you![:)]

    Basil
    Bayleaf
    Bouquet Garni
    Curry powder
    Garlic powder
    Dill
    cumin
    thyme
    sesame seeds
    sage
    parsley
    paprika
    celery seeds
    minced onion
    chili powder
    chipotle chili powder
    oregano
    a lemon garlic pepper blend
    at least 2 different kinds of pepper in grinders
    a multipurpose seasoning like Morton's Natures seasoning
    I also have a lot of "blends" that I either buy or make myself

    and I think I will stop there….

    These are my basics.  I use others off and on, but MUST have these!  FWIW, buy the new spices (as you run out) in bulk.  It is soooooooo much cheaper.  For example, the last time I bought bay leaves, I got a small bag and put about a dozen in it. The cost? Eight CENTS. A jar in the spice aisle was roughly $3.00!

    I've been buying them in bulk to save money for some time now, thus the need for new spice racks complete with empty jars. LOL I'm thinking I may need one more.

    I use so much garlic powder it would be a waste of time putting it in little jars. I have one big container of it. Cinnamon too. I use alot of fresh garlic too. We just love garlic and recently I discovered jarred minced garlic. What a timesaver!

    That's definitely one of my favorites too.  I looovveeee garlic [:D]
     
    The other one I use most often is a blend called Italian Seasoning:
    MARJORAM, THYME, ROSEMARY, SAVORY, SAGE, OREGANO, AND BASIL.

    Lemon Pepper is also a favorite, especially for grilling.

    I never knew what was in that, but I use it alot.

    Mmmm and lemon pepper for grilling fish! I don't think I have any of that...

    Dried spices are rather limited in my house....I use peppercorns and fresh grind pepper, sea salt for now and then use, Natures Seasons, lemon pepper, dill weed, minced garlic and onion, chili powder, cumin, cinnamon and the sticks as well, ginger, cloves, nutmeg, and I think that's about it for regular use.  Then of course there are the spices that I pick up for pickling and canning once a year or so.
     
    FRESH I have to have garlic, scallions and my ever present pots of basil (LOTS of basil) dill, parsley, sage, rosemary, thyme and garlic chives.  I am a fresh herb freak and I like to grow my own, so much so that I added shelves for the pots to my kitchen window.

    Is it just me, or does it have a funny taste?  I bought some at Trader Joes and it's in a neat grinder type bottle.  I find that if I sprinkle it on something (as opposed to mixing it in to a recipe) it has almost a bitter taste.

    You use a LOT less sea salt because it's so much more potent....at least that's what I've read and what I do.....

    Me too.  I think fresh harbs taste so much better than dried.  I also like the satisfaction of having my own whenever I need it.  Never have to worry about running out, or if the store even has the herb in stock, which can be really frustrating if they don't. 
     
    But dried spices
    Oregeno
    Thyme
    pepper - white and black
    sea salt
    boullion - chicken and beef
    I also like the blends
    I saw a grinder with salt and galic in it.  I thought that was really cool and I need to get one.

    I just have to chime in and say that I tried coriander seeds in a turkey chili this week, and BLECH! I did not like it at all!

    I grew mint once just cause I think its pretty and I love the smell. but I never used it. It also grows really easy but I did manage to kill it in the end. I have absolutely no green thumb. Maybe if it was right in my kitchen window and I could see it everyday... I have morning sun in that window. is that good for herbs?

    Coriander is a tough one.. i have yet to find a recipe I really like that uses it...
