    Finally Friday Chat!

    Well Friday came quickly for me.  Between the interview earlier this week and getting a crash course in office management from my coworker (whose last day was yesterday) I haven't had much time to breath.  I'm a tad nervous about running an entire office.  It's completely new to me.  So here's to hoping I don't screw up too badly!

    I'm waiting in the doctors office. I had the first appointment, or one of them, and I have waited now for 15 minutes. I'm having allergy testing again, because they need to in order to continue my shots. Then I'm going to work for a bit. I decided to cancel my client this afternoon, on account of feeling horrible, but the observations I am doing need to get done, and I don't really need to be near anyone.

    Well, when I was wrapping up one of the cakes for Riley's bday cake so it could set in the fridge and the SOB cracked! I am soooo pissed. I will just use that one for the bottom layer but WTH! Now I have to play masonry guy this morning and spackle the thing up and hope and pray it will stay together. If not, that's what good stories are made of right? LOL

    I am working from home again today and about 7:30 this truck came buy and dropped a HUGE trailer in front of our condo. Not sure why, not sure how long it's going to stay there. They aren't the best at communicating here. I am hoping they aren't planning on resurfacing the street this weekend. We have everyone coming over and it would be a complete and total mess! DH will be especially ticked off since his parents are coming into town tomorrow and this type of stuff drives him crazy. Nothing we can do about it I guess so why waste time worrying.

    QUESTION: I am making some liver pate to serve to in laws on Saturday night as a little snack (the party is at 3:30) - what else goes good with that? It's chicken liver pate. Hoping for something that is either right out of the package or I can make ahead of time (like today). Thanks!

    Re: running an office, you will do great! :)

    I decided to take the day off. I'm beat and it is cool and rainy. Perfect day to catch up on shows and read a book or something. This weekend is going to be hectic.

    I would serve nothing with liver pâté, because I would not eat that. That's a good answer, right?

    I apparently did not need allergy testing, because although I last had it two years ago, I've only been getting shots for a year. But we did it anyway. I'm already here, I already paid the copay, I already mentally prepped for it. So now it's done and I'm just waiting to get checked on. And I can show them that I am still reacting to one of the shots I got Wednesday.

    Chicken liver pate is traditionally served with crunchy french baguette slices that have been toasted or grilled.  Common condiments are small gherkin pickles, chopped hard boiled eggs and pickled red onions.

    Here's a recipe for quick pickled red onions.

    Ingredients

    • 1/2 cups apple cider vinegar
    • 1 tablespoon sugar
    • 1 1/2 teaspoons kosher salt
    • 1 red onion, thinly sliced

    Preparation

    • Whisk first 3 ingredients and 1 cup water in a small bowl until sugar and salt dissolve. Place onion in a jar; pour vinegar mixture over. Let sit at room temperature for 1 hour. DO AHEAD: Can be made 2 weeks ahead. Cover and chill. Drain onions before using.



     Today is supposed to be our first near 80 degree day.  I think I'll start drinking sooner rather than later.

    Island Girl Cocktail

    8 ounces (1 cup) cranberry juice 

    8 ounces (1 cup) vodka

    4 ounces (½ cup) ginger ale
     
    2 ounces (¼ cup) fresh lime juice in a large pitcher
     
    Pour into ice-filled glasses, and garnish with lime wedges.

    Deb's right on with the sides to pate - it is so rich you need something that cuts through the richness - like picked onions and gherkins! Of course if they are like my husband a good cheese is never wrong :)

    I cannot shake my irritability. I was snappy with DH this morning and even with Bugsy. I really felt bad for the latter as it isn't his fault he's a mess, but I can say that when I am short on time I get intolerant of his lameness. I know how awful that must sound but there are just times I don't want to have to deal with a compromised dog.  Its been 10 months, I just truly want to see him move properly

    I cannot shake my irritability. I was snappy with DH this morning and even with Bugsy. I really felt bad for the latter as it isn't his fault he's a mess, but I can say that when I am short on time I get intolerant of his lameness. I know how awful that must sound but there are just times I don't want to have to deal with a compromised dog.  Its been 10 months, I just truly want to see him move properly

    I love liver pate and agree with Deb that it should be served with crunchy toast. Now I'm hungry :)

    Had a great visit/meeting with the new rescue group yesterday. I took a sweet picture of their golden retriever snuggling with a baby goat. I'll try to upload it here later. They have some gorgeous horses and one colt that I'm madly in love with.

    We're going to look at another house today. It's priced on the low side for what/where it is, so I'm sure it'll sell for more than we want to spend but DH wants to see it anyway. After that, I have a much needed hair appt.

    Sunny and warmer today and we'll be in the 90s the next few days - yay!!
