    For the meat ravioli we used a mixture of 1/3 veal, 1/3 pork, and 1/3 beef with parm cheese, red wine, celery, and parsley. In terms of quantities, it is basically until it smells right LOL For the cheese we use parm, farmers cheese, egg and something else I can't remember. The recipe is from my grandma and her sisters. My mom MADE her write it down years ago!

    I think Rex has blown the ACL in his right knee. :(  Noticed him favoring it Friday and it's gotten progressively worse.  He's hardly putting any weight on that leg now.  He already had a vet appointment for tomorrow for a heartworm test and to check what I thought was a shoulder injury. I sure hope I'm wrong about his knee. 
    I hope you are wrong and it's just a sprain :(

    I think that must be very similar to my grandma's recipe. Back in those days, my mom and aunt had to use a hand crank meat grinder, so I'm sure that took forever too. I also remember my dad talking about what a hot day it was when they were making them and the dough kept shrinking up. I still have the special rolling pin but have never used it myself. I should see if I can get the recipe for that and for the sauce. That sauce was also out of this world.

    As for the gene thing, neither my mom or my aunt was Italian and they still managed to do a good enough job to impress their Italian husbands and the rest of us.

    I slept like a rock last night and feel great this morning. I might go do some fun shopping today too.

    I almost did, until Gracie woke up at 5am to go out.  I can't blame her, I woke her up at that time yesterday to get her into the car to drive 2+ hrs down to CT to enter a show.  Judge told us we NQ'd when Gracie failed to go over a jump during a new exercise.  Turned out it should only have been an IP, so the judge was kind and changed it so that was a qualifying leg. Thank goodness, b/c if it hadn't been, it would've been our first NQ ever, and would have derailed our goal completely!

    I bought myself a baby sleep sound thing (looks like a little lamb) and slept deeply last night, but it might have just been exhaustion after the day's stress. G went home w/the 1st place in Adv (score of 99 against 21 competitors).  Due to the flub in the jump, she lost 10 pts (I'd much rather have a score of 90 than NQ!), but only one other competitor qualified, so we got 2nd.  Phew!  I stuck around all day to find out that info, help steward as needed, and cheer on other competitors.  A nice group of people.

     Beautiful weather here today.  Wish I had the day off, but alas it's a working day.

    THANK YOU TO OUR VETERANS and their families!  I know that yesterday was Veteran's Day, but I wasn't online and since everyone else gets the benefit of the day off, I wanted to thank those for the REASON.

    As for the gene thing, neither my mom or my aunt was Italian and they still managed to do a good enough job to impress their Italian husbands and the rest of us.

     

    My significant others' father (who has passed away) was not Italian and his lasagna was the best I had ever had.  Several layers of cheesy, meaty, veggie, pasta goodness.  I may be part Italian, but my Mom wasn't much for cooking and for the most part I'm self taught (and still learning!).

    My mom is actually Polish and German and my Dad is 100% Italian. My mom can cook and bake the socks off of most people. She is the one that taught me mostly the basics. I worked with her for years getting all her recipes down in a binder cookbook. The stuff I always struggle with is, "how long do I cook this roast" and "what cut of meat" should I buy. When it comes to baking I am not that good; however, people have come from out of town to eat my lasagna :)

    I, like Glenda, not Italian but have been told that my spaghetti and lasagna rock.  I am getting decent at alfreado (my fav) but I have never made or even eaten any homemade ravioli .... yummy.  As a kid, I used to eat Chef boy ar Dee...lol...I dont think that counts.  I do make an awesome Chicken with homemade egg noodles but never tried any other pasta.   I have been instructed by hubby's Dr. to cut some carbs from his diet.  Now that I have finally gotten him to like pasta, I am told not to serve it. grrrrr...any Italian ideas with this problem??

    Twister and Rex you need to take it easy on mom.... good vibes for the Vet trip.

    Saturday, My granddaughter and I got together to paint clouds in the nursery.  That was fun.....

    Also saturday I had to fix the plumbing to the septic.... that was yucky

    Sunday I was so tired from Saturdays excitement that I really just vegged out.

    My best vibes for all the folks still suffering out east and in Indiana explosion.

    any Italian ideas with this problem??

    You could switch to whole wheat pasta.  While I think it's OK - my opinion it's better than nothing.  One of my favorite Italian dishes is from Giada from Food TV.  It's her Chicken Piccata.  Instead of serving it with pasta, I usually serve broccolini.  Usually hubs literally licks the plate when he is done.  It is super easy and quick!

    Another favorite in our house is my eggplant parm.  It's a little different since I bake the breaded eggplant and don't use a lot of sauce.  I make it with roasted red peppers and fresh mozzarella. I stack them into liitle piles.  YUMMY

    I was just introduced to eggplant last summer and we love it.  I have recently bought some wheat flour and I have seen prepared wheat pasta and spinich pasta and some other veggies.

    Thanks for the tips......by the way Giada is one of my hubby's favorite Foodnetwork shows :)  Not sure if he is paying attention to the recipe or the pretty lady, lol.

    Did I miss something Glenda?  I didnt notice anything out of line.  I just referred to you cause you are the Queen of marathon cooking :)

    70ºF on Saturday. 28ºF this morning, without considering "windchill". Gusty wind made for rosy cheeks. Piper had a great time running through the deep grass at the WMA, even though the Chinese Ringnecked Pheasant is apparently extinct in this county.

    Had to run a service call this morning to a pretty little town down south of here-snow got heavier on the way, The sun broke through on the way back, and I got to watch a Bald Eagle turning around in the sky. Always neat to see. Actually watched one dive at prey by the Minnesota river in Mankato. Impressive birds.

    Winter emergency supplies are now needed in the cars. Plan for the worst possible event. Boots, gloves, extra coats , blankets, brandy, sand, candy bars, candles, jumper cables, extra scraper, chains. Having more than is needed is much better than having less.

    Jackie, sorry to hear Rex has a sore knee.  I sure hope it isn't an ACL like you suspect.  I was thinking about you and Twister earlier today ...just wondering how the little fellow's been doing (and you). 

    Not much new to report on this end.  Been super busy with school and not much time for the internet realm lately.

    I went to the mall today and got totally disgusted.  Can you guess why?  YUP, xmas stuff out already!  I can feel the humbug coming out earlier every year!!! 

    I hope ya'll been behaving lately.  Give the puppers some hugs and treats for me...tell them it's from uncle Johnny!!!  Wink

    Nice to hear from you, Johnny. :)  I was wondering how you were the other day. Twister is doing great.  He has his third chemo treatment tomorrow if his bloodwork is good.  He's full of energy and has a good appetite.  We have another ultrasound scheduled tomorrow also.  I can't wait to see it but I'm also a little bit not wanting to know how things are looking, you know? Good luck with your school work!

    Johnny - it's always good to see a post from you. I hope you're doing well.

    Doug - the way you describe the wildlife you see, it almost makes me want to move to Minnesota.

    All the chat about Italian food has me craving it like crazy tonight. I'll have to make do with leftover chicken instead :(.

    My dad's parents immigrated here from Italy. They both had passed away before I was born but I'd have loved to have gotten to know them.
