    Busy here, no time to play. I hope everyone is well - humans and dogs alike.

    Truck repair is nothing simple or cheap. I'm just trying to find the silver lining in all of it. Crying

    Methinks autumn has arrived in mid-Michigan.

    Bummer.  That silver lining is hard to find sometimes.

    My sis in Phoenix and her husband are planning to come and visit at Thanksgiving.  They fly in on Thanksgiving and she wanted to make sure I didn't go to any extra effort to plan dinner around their arrival.  I told her not to worry since my plans are to buy a few pies from Janie's pie factory and invite everyone for dessert. :)   We're going to drive to the coast the next day and stay till Sunday.  I'm looking forward to it and only hope that Twister is still feeling good at that time.

     Autumn has definitely arrived. I need to do some shopping tonight for a fleece, sweatshirt and maybe a couple long sleeve shirts for work.

    I rearranged my bedroom back to the way it was at 5 am this morning. The dogs were driving me nuts and I didn't particularly like the arrangement either so I tossed and turned and the dogs tossed and turned and I finally gave in. After that I slept nicely and Neiko was happy. He came right back into the room and scooted under the bed ;p

    My sinuses are in chaos and it is not very pleasant.

    Its a cool 58 in NWA, staying in the 70's for the next several days   I love this kind of temperature.

    Well last night my hubby opened a large container of Ricotta cheese that he has bought at Sam's with no clue what to use it for.   Then, he read the label that said best used within 3 days of opening.  LOL, so today's lunch time will be spent getting items for my sauce and I will be making lasagna tonight both for eating and freezing.  This is something I usually reserve for a weekend.  Glenda I have never done stuffed shells can you share your culinary secrets Wink  Anyone else have special favorites using Ricotta?

    I spent all of last weekend repairing a plumbing issue.  I love my old house but it's always something, :).   Now all I have to do is paint and put the shelves back.  Thought I might change the one large cupboard to a pull out shelf since we neither can get on our hands and knees to get to anything and have actually not been using it much.   Oh my gosh, they want a fortune for those pull out shelves.  I guess I am going to have to break down and check out pinterest.  I know so many ladies that have become pinterest junkies I have resisted til now.

    turbulent weather here - tornado watch until this evening I think - at least last I heard.

    hmmm ricotta - lasagna, stuffed shells or manicotti - other than that only as a small additive to dishes - it makes a wonderful cheesecake (and a few other desserts - just google ricotta desserts)

    and is a very healthy cheese overall

    Gin, these are delicious. Makes 15-20 fritters


    1 lb. zucchini, approximately 2 medium, grated
    2 garlic cloves, thinly sliced
    3 large scallions, thinly sliced
    1/2 cup fresh ricotta cheese
    2 large eggs
    2 teaspoons finely grated lemon zest
    Kosher salt and freshly ground black pepper
    3/4 cup flour (all-purpose or rice flour)
    Olive oil, for frying
    Lemon wedges, for serving
    Maldon salt, for serving


    In a large bowl, combine the zucchini, garlic, scallions, ricotta, eggs, lemon zest and 1/2 teaspoon each of salt and pepper.






    Stir well, then stir in the flour just until incorporated.


    Line a large baking sheet or plate with paper towels. In a large skillet, heat 1/4 inch olive oil until shimmering. Working in batches, add 2-tablespoon mounds of batter to the hot oil, spreading them to form 3-inch fritters. Fry over moderately high heat, turning once, until browned and crisp, about 3 minutes.

    I suppose the silver lining about my truck repairs, it's still a million times cheaper than a new vehicle. Michigan winters, specifically salt on the roads, are so hard on vehicles. The truck is 8 years old, very low mileage, so it's well worth the upkeep. I just hoped to avoid it all at once.

     had 3 overripe bananas stinking up my kitchen so I made some yummy banana bread muffins = YUM!

    Hyperventilating from all the work I have to do but wanted to share the video from the tv spot this morning for those who don't use FB -

    It all went really well and the dogs were amazingly well behaved. Shane got happy barky a few times but I was armed with treats and able to distract him. We got there at 7:30 and didn't actually go on until close to 9, so it was a long time to keep a room full of dogs entertained.

     We've got tornado watches and all sorts of fun here.

    Lately, I've been getting a lot of odd coupons. The other week, I got Marlboro coupons. I sold those on ebay for $.99. Today I got something for a Target wedding registry. I have no idea what I've been buying at Target that suggests to them that this was the right thing to send me, but clearly I must have been buying something. In the thing they sent me, I can get a $20 gift card for making a registry with 10 items. So, I guess I'll announce it here first... Luke and I are getting married. We want a $20 gift card.

    Oh my.  I believe monsoon season has arrived in western MA.  I think I'm growing feathers on the back of my necks.

    Had to have DS at the dentist at 7:50, DH at the bus for casino day at 8:00, come home and put on clothes for work, meet the gal I'm training this week at 9:00, and then the rain started and spent the rest of the day trying to stay reasonably dry.  Home and dry now, but I still feel soggy.  And I think that my feet may be starting to web.

    Stuffed shells or manicotti both I make the same way.  Ricotta cheese, fresh grated parmasan and mozzarella.  I typically use some fresh flat leaf parsley as well.  Just mix it all together and put it into the cooked shells or pasta for manicotti.  The sauce is the real key to either.

    Must get coffee and try to wake up.....

    ETA: Just got back from Wally World with all the supplies for sauce :)  I opted for Manicotti since I have never done it either, lol.

    We put an ipad, a  laptop, Star Wars sheets, soft crates, and a new car crate for Callie on our registry. We're going to go on trips and take her, and I would rather have another folding wire crate in my car, so I can fold it in case I want to use my seats for anything other than the crates. If nobody buys us the gifts,  we got 10% off to buy them ourselves.
