    Joyce - I was surprised by the storm Sat. night too and it didn't really start at my house until I was ready for bed. i was so happy that Shane seemed fine with it cause I was super sleepy. If it rained at all, I couldn't tell in the morning. It's heating back up though and will be in the 100s by the end of the week :(.

    I went to the gym for the first time in ages today. I'd been doing the treadmill here and the elliptical at home, along with using my free weights. Definitely not the level of my normal gym workout and today I was sweating like a pig and struggling with the weights. I need to make more of an effort to get to the gym at least a couple times a week from now on.

     Well it has been a Manic monday, having to stop work for a couple of hours while rushing the dog to the vet. Ag now it is sitting down with a glass of wine and chill time lol

    And, I didn't know we had a firefighter amongst us!  Nice job!

    Here is a King Ranch Recipe.  I'm not sure if this is just a Texan thing, but its goooood!

    • 1/4 cup margarine (I use butter, call me Paula Dean)
    • 1 medium green bell pepper, chopped (I omit)
    • 1 medium onion, chopped (I usually add more)
    • 1 can (10-3/4 oz) condensed cream of mushroom soup
    • 1 can (10 3/4 oz) condensed cream of cricken soup
    • 1 can (10oz) Rotel Diced Tomatoes and green chiles
    • 2 cups cubed cooked chicken (more or less...usually more here)
    • 12 corn toritllas, torn into bite sized pieces (I usually use more...I like the thick cut tortillas)
    • 2 cups (8oz) shredded cheddar cheese (I use thick sliced Velveeta instead)

    Directions:  Preheat oven to 325 degrees F.  In a large sucepan, cook pepper and onion in melted butter until tender, about 5 minutes.  Add soups, Rotel and chicken, stirring until well blended.  In a 13x9x2 inch baking pan, alternatively layer tortillas, soup mixture and cheese, repeating for three layers.  Bake 40 minutes or until hot and bubbline.  Supposed to serve 8. 

    Note:  while I use the Velveeta cheese for the layering...I sometimes top it with shredded sharp cheddar cheese.  Yummy!  This dish gets better each time you reheat (oven preferred for reheat)

    Oh, that is yummy! My MIL makes this dish frequently and DH started making it when he first joined the fire dept. It was easy, inexpensive and filling, so they all loved it. I haven't had any in a long time though, so it's on my list to make when the weather cools off. I rarely turn on my oven in the summer.

    Yesterday I was craving fruit when I went grocery shopping, so I bought 2 containers of blueberries, a cantaloupe and a watermelon. Last night my MIL stopped by and dropped off 4 more cantaloupe that she's grown. We're either going to need to eat a lot of cantaloupe each day or I need to find something creative to make with them.

    OK, you guys can't tell Rick what just happened.  I can't believe I did this.  So, he's not home from work yet.  The hooligans were getting antsy and needed to get some energy out.

    I decided to step out the front door with my knee wheeler to go throw the ball for them for a few minutes.  Well, I get outside and let go of the wheeler for a second to turn around to shut the door....and the darn thing rolls off!  It rolled off about 6 feet from me!  Indifferent  Good grief.

    I stood there for a few minutes, not knowing what I'm supposed to do.  It hurts like hell to walk.  But, I had no choice.  Its walk the six feet or have Rick drive up to see me stranded.  Embarrassed

    So, I baby step it to the darn thing!  I made it.  Then threw the ball a couple of times and came back in.

    Mum's the word...he is none the wiser.  Sheesh.

    I hope everyone's day is a bit better than the starts posted earlier. Dodger, the kitties are usually in charge, despite what you've been told by the teenager dogs at your house.

    Barbara, that recipe sounds delicious! I've added it to my iDog recipe file.

    We were supposed to get some major rain last night, but we didn't get anything, so I had to water the garden. I still can't figure out how the storms missed us, but they did. The humidity finally broke, so we'll have nice sleeping weather tonight.

    Thinking of the dogs and humans who are having some difficult times.

When I had my hysterectomy, I belonged to a forum and remember some of the horror stories women had of going to check the mail or something and not feeling like they could make it back home. I heeded the warnings and never ventured far from the house. I'll keep my lips zipped but if you're like me, you'll end up telling Rick about it anyway.       The recipe I use is similar but I use two bell peppers and one onion.  I also add 1 teaspoon chili powder and one teaspoon cumin.  I use three cups cooked, cubed chicken and usually get a rotisserie chicken from the store. I  only do two layers starting with the chips, then the chicken/soup/veggie mixture and then cheese, repeat and end with the cheese on top.  When I made it the other night I used some chiplote cheddar I had and it was super good.  If I'm feeling like being somewhat healthy I use 2% cheddar cheese and we can't tell the difference. I does reheat beautifully and we're always excited when we have it for leftovers. :)

    We got our new phones at work today and that was so much harder than it had to be thanks to my coworker and his "help" with the project.

    I do believe I saw Maze having a chat with him before he went outside so I'd bet 10$ that she put him up to it. Barb, one of my client's dogs taught Dodger how to chase and attack cats so when he went home last month, I did boot camp to reprogram that. He's gotten A LOT better now and is playing with the cats.

    Great job fighting the fire Ginger!

    That chicken sounds great!  And, since I cheat and use the roaster oven which is downstairs, I don't have to wait forever!

    When I had my neck surgery I had to walk every day to help the hip heal where they'd harvested bone.  We lived in CA, in the Central Valley, so hot, I wore a hard collar for around 14 weeks just to make things hotter, and I'd walk from the condo to the gated community gates to check the mail.  I'd make it as far as the community room and sit for a bit, then stop again on the way back.  Rusty was my "helper" on those little jaunts with the walker.  But, I was always just terrified that I'd slip and no one would notice for hours and Rusty and I would get cooked waiting for help.

    Barb, I suspect you'll tell Rick WELL after you are healed!

    Jackie, I'm wishing you a SUPER POSITIVE ALL-Good-Things-Come-To-Those-Who-Suffer kind of reward-for-enduring-the-idiots-and-crappy-news day tomorrow.

    Construction begins again tomorrow on the pantry.  Oye, it's never ending around here.  I'm tired already just thinking of it! lol

    Saw a pair of baby deer on the side of the road, grazing on grass.  Said big prayers they wouldn't wander the remaining 20 feet over to the highway.  They had their baby spots and little flickering tails, so cute!

    Some kind of weather front came through a cooled down the temperatures today.  It is the perfect kind of sleeping weather.  THANK YOU DEAR BABY JESUS for good sleeping weather.
