I've had the most success with a short, sharp, "HEY!", crossing my arms (don't want any dangling limbs to get chewed on or mistaken for engaging in play), turning away, and just ignoring the hyper dog.
THIS is another example of really good "dog-ese" -- we humans tend to think we're "superior" because we use words and they don't. But we FORGET that dogs use a huge array of physical triggers to communicate.
ONE of thsoe is skin surface tension. when you stand up with your arms crossed (hugging yourself essentially) you tense up. (particularly if you are trying to get the dog's attention.)
Dog's NOTICE that -- because skin tension is one of the things they 'read" form each other. Next time you seeyour dog "communicating" displeasure with another animal touch the scruff of the neck - you'll find it's pretty danged tense! THEY see this/ So for us to mimic that to get their attention is a good thing ... and it 'works.
I tend to stand feet apart either with my arms crossed or my fists on my hips and literally "make like a tree" and be STIFF and unyielding. They GET it.
And "Hey" or "What are you thinking??" -- you can put lots of emotion into it but they aren't your typical "no" -- and it tends to get their attention!!
