This salad recently made a comeback at my house.  My MIL used to make this all the time and my kids loved it.  I don't think I've made it in the 3-4+ years since she passed but the kids raved and asked for more.  And it's sooo easy!

1 large green bell pepper

1 large yellow bell pepper

1 large red bell pepper

3-4 large celery stalks

2-3 large carrot sticks or about 25-30 baby carrots

1/2 red onion

1 cucumber partially peeled(we leave this out, we're not crazy about them)

1 can jumbo black olives, pitted (drained)

4-5 roma tomatoes 

Chop everything coarsely into large bite size pieces.  Cut carrots and celery on a slanted diagonal to look pretty.  :)  Add about 1/4 cup light zesty italian dressing and marinate the vegetables all day.  If you're home, rotate the container several times to ensure all ingredients get a good coating of dressing.  We topped ours with a sprinkle of gorgonzola or bleu cheese dressing when served.  Yum-O!  LOL!
