Cheap Meals

Take a look at the miserly moms site: http://www.miserlymoms.com/MOMfrecipes1.htm I have used some of their recipes.

I used to make chicken last a while by cooking a LARGE whole chicken for night one, serve with veggies. Cut off some big chunks of meat and put aside before you serve to make sure you have them later :) On another night, take those chunks and some cheap frozen mixed veggies (heated up) and mix with a bit of gravy and put in a pie dish. Toss a crust on top and bake for chicken pot pie.  Cook the bones with scraps still one them to make broth for another use or make a bit of soup.

Did you know pizza is sooo cheap to make? You probably have most of the ingredients on hand- Flour, salt, yeast, a dash of sugar, tomato sauce with some spices, plus cheese.

For quiche you can use potato crust as well. Just slice "chips" from a potato and line the bottom of a pie pan. Spray with a little cooking oil and cook until they start to soften a bit before pouring in your egg mixture.

Uh..ya...no....LOL  Tyler is a manager of a Dominoes so pizza is really cheap, but I'm soooooo sick of it!  Just the thought of it turns my stomach...maybe homemade might be better once I'm not pregnant anymore....but I'm still anti pizza right now.

Thanks for the potato tip, I'll have to try that, it sounds good!

well since you have jasmine rice you can make a curry

    I like to stir fry

beans and rice - I prefer black beans but whatever you like will do

I don't really cook with recipes I'm more your what have I got in that needs to be eaten and what cuisine is calling my name - italian, oriental, indian, mexican, etc.  We have a good selection of spices so I can usually find what I need to flavor it.

I made some nice enchiladas last week using some ground beef.

DH makes shepherd's pie or cottage pie (one with lamb one with beef) which is ground meat browned with some onion and carrot and thickened a bit (he uses bisto or oxo) and then you put it in a casserole or pie pan and cover with mashed potatoes and cook it.  Very hearty.
