Last night was nacho's supreme with ground beef season with red pepper, chili powder and a bit of garlic, melted cheese, and "the works".

Oh, nachos sound good!  You may have inspired me, Glenda.

Didn't think that the chicken would, since you had that tonight.  But, I cooked for the dogs yesterday so needed something quick and easy for the people

Well right now I have ribs and potatoes in the oven. Probably fix mac and cheese and corn too. Wish I had biscuits.

Can I eat over??? Sounds AMAZING!!!! Ribs and mac-n-cheese are my favorites!

Tonight we are having "mediterranean shrimp". Shrimp cooked with olive oil, garlic, red pepper flakes, roasted reds, sliced green olives, parsley, lemon juice, salt and pepper. Served over Brown Rice. With a green salad (with lots of veggie goodness inside: mushrooms, peppers, onion, carrot, artichoke hearts) with feta cheese and balsamic vinaigrette! Yummmmmmmmmyyyyyyy!!!

For those that want to come over your more than welcome to. JJ fell asleep on the couch and I tried to wake him up but....it was just me and Samantha eating. And I fixed ribs, potatoes, mac&cheese, and peas. Hope JJ enjoys all of that reheated.

Oh and after reading Alieliza's post I want shrimp now!! Wanna share?

OK I lied, we had grilled chicken after all.

I shouldn't have read this. . .I can't eat most of these things or I'd be huge!

We are having grilled pork tenderloin with corn on the cob that was also grilled.  I made some 2% mac & cheese and some asparagus as well.  Quick, easy and low cal!...except the mac and cheese...but I need some comfort food tonight.  I am feeling pathetic!

I hope Kenya got a bite of that chicken, LOL. She looks so hopeful!

I had Chinese takeout, for lunch and dinner today. Yesterday, too, come to think of it. I am full of awesome culinary inspiration. All of these mentions of asparagus are making me want to go get Longhorn to make me some, LOL. Can you say, "too lazy to cook for one person"?

LOL, she did.  Ever since I got back from vacation she has been way more outgoing and inquisitive with DH, especially when he has food....hmm....

While I was at Wal-Mart this a.m. I found a 2 lb. pork roast in a package with a bunch of cut up veggies - a quartered onion, small potatoes, sliced carrots and celery.  It could go either in a slow cooker or a covered dish in the oven. I put it in the oven for about 3-1/2 hrs. and it turned out very good.

We were out furniture shopping and did the Chrlie D-day thing so it was Little Ceasar's $5 hot and ready pizza with crazy bread.  Tonight will be packing (actually will probably be a lot of throwing out) so DH is going to just grill up a flank steak that we need to get rid of before the move and I will probably make a greek salad.
