I'm forever wiping up pools of water around it where DH grabs it with sopping wet hands when he's at the sink. Yes, I'm grateful he helps with dish clean-up, but the area behind the sink looks like a flood went through it. Do those dispensers work well (and relatively neatly)?

Yes it works well - I bought one of the hand soap dispensers and somehow he makes a mess of that in the downstairs bathroom - my guess with that one is that he moves his hands before it finishes
When I saw a sale and I had a coupon for the kitchen one I thought I'd give it a try and it is much better - still water behind the taps but no soapy water :) I have it and a pump hand soap dispenser in a small soap dish thing and that helps too. Definitely an improvement over the original packing and a pump dispenser.
Also because I am cheap, er um, 'thrifty' I don't buy their refills. I pry open the bottle with a butter knife and refill it with whatever I buy on sale :)

eta: and there is no way I could get it all out of the breakfast and it still smelled pretty strong. Its some environmentally friendly stuff from Costco so I knew he'd be alright hehehehe With his normal level of gas I can almost guarantee some bubbles later
