I'm getting to this post late, but I'm sending good thoughts to you, your Mom, and your family during this upsetting time. I've had friends and family go through chemo for various kinds of cancer. Some have a hard time, others do quite well. I'm sure it'll help that she's working with a Naturopath as well as an Oncologist.
As for protein sources, I know there are powders you can buy. My husband has used them when he's into a particularly serious workout regime. I also have a friend who used them when she was pregnant with twins and she simply couldn't get the recommended protein based on diet alone. I don't think the powder tastes too good, so mixing it with something helps. My friend made yogurt smoothies. Perhaps some additional snack ideas and recipes could be found if you searched on line for "low sugar, high protein recipes" or something.
Again, sending good vibes your way, and the best thing we all can do for our health (physical and mental) during such a major hurdle is to keep feeding ourselves with positive energy from the support of loved ones. May your Mom face each day with a hopeful spirit, feeling the thoughts and prayers of others holding her up.
