It just sounds like they aren't housetrained. Dogs don't generalize well, and they don't speak english so they can't tell us how they look at the world. They may have learned that it's not okay to pee/poo in your house, but haven't made the connection that this rule also applies to this hotel where you're staying. Or there may be some other confusing aspect to your situation right now that is making the gaps in their housetraining knowledge more apparent.
They are not trying to tell you something--dogs don't think like that, which is yet another reason to love them.
It sounds stressful, but I would relax and go back to housetraining 101. The only thing they are trying to tell you is that they don't know where it's OK to poo and pee. You need to teach them.
Mistakes are your fault, not theirs. Set them up to pee and poo exactly where you want them to and confine them to crates when you can't watch them directly. Don't let them out of your sight in the hotel, praise like mad for going outside and don't scold them if/when they make mistakes.
