    Dip Recipes?

    I'm bringing dip and chips to something this weekend and next.  Trouble is, I'm tired of my usual offerings and was hoping you guys had a few different recipes to share.  Thanks for any and all ideas.  :)

     Here's a recipe I got off the MIL. She makes a soup out of it but I make a dip out of it.

    Chicken Taco Soup/Dip

    1 can black beans

    1 can red kidney beans

    1 can corn drained

    1 15oz. can diced tomatoes with chilies

    1 can tomato sauce

    1 diced onion

    1 envelope taco seasoning

    2 boneless skinless chicken breast

     

    And here's how I cook it.

    Dice up chicken and cook it. Place all ingredients in pot and cook it 30 minutes. I add mexican cheese dip from walmart called Gordo's Cheese Dip(mild or origanl, I use mild) in the pot and let it melt and mix with the rest of the ingredients. That's how I get it into a dip. Then I use those tostinos toritilla scoops and eat it!! It is so good!

    I find the cheese dip over there where the deli makes their pizzas.

    Here's how the MIL cooks hers.

    Place all ingredients except chicken in a crockpot and cook on low for 5-6 hours. Cook the chicken and add when you are ready to eat it.

    My friends are always requesting that I make 7-layer dip for get-togethers.  Very easy to make, and I usually get one of those disposable alumnium pans with the plastic lid to make it in.  Easy transport, and you just toss the pan out when the dip is gone.

    This is the order you put them into the pan, starting with Layer 1 at the bottom, then so on with the cheese on top.  It's easier in this order because of the different consistencies.  Also, I think it tastes best when chilled for an hour or so before serving.

    Layer 1: 1 can plain (original flavor) bean dip

    Layer 2: Guacamole

    Layer 3: 1 packet taco seasoning mixed into 1 8oz tub sour cream

    Layer 4: Diced roma tomatoes (any tomato will do, but I like romas because there are fewer seeds, so they aren't so messy to dice)

    Layer 5: Diced green onions

    Layer 6: Sliced black olives (I always skip this one cuz I don't like olives, but will sometimes put them in a small bowl on the side)

    Layer 7: 2 cups Shredded cheddar or nacho/taco cheese mix

    Serve with tortilla chips.

     It is good. And I hate beans!! Lol. But I can go to town on that recipe.

    A group that has a booth in the park on the 4th. of July had a really good dip one year that they served on a plate with a helping of chips.  Just mix a can of drained & rinsed black beans, a can of mexi-corn and some pico de gallo type salsa together.

    Another easy one to make- spread a container of soft cream cheese in the bottom of an oven proof dish (disposable works great.  LOL), cover with a can of canned chili, and some shredded cheddar cheese and bake until heated through/cheddar cheese is melted.  I think I baked it for 30 minutes at 350.  Serve with tortilla chips.

     All of these are delicious looking and a few I've made a version of before.  I love artichoke dip but hummus, I have to admit to never even trying it, I'm a food coward sometimes. lol  Go ahead, laugh. :)  The above sounds so good and quick, I could eat that for dinner but then I have eaten chips and dip for dinner. Stick out tongue

    I can make nachos a meal too. You really should try hummus. It's quite yummy and not too bad for you. I did over do it one time and spent a bit of time in the bathroom, but I'd really eaten a LOT Embarrassed

    I might be thinking of something else, but isn't hummus just chick peas (garbanzo beans) smashed up into a spreadable paste? You can add neat things to it like feta or sundried tomatoes.

    Basically, yes. You also add tahini paste, lemon juice, spices, olive oil and anything else you want.

    The thing about hummus is twofold, for me.  One the word itself conjures up some sort of unpleasant image of well, I don't know what, but I don't like the word.  Weird, I know.  The second thing is the texture issue.  I'm going to give it a try sometime and see if it's like some other foods I've been reluctant to taste only to discover I like them. :)  This didn't work with beets. lol
