    I am thinking Fish this weekend..

    I think I will make some pecan encrusted talipia this weekend.  On Tuesday we are going out for my birthday and I want hibatchi shrimp and scallops. friday night is heavy appetizer night since we have our wine tasting club and it is a Sake night. I love a good sake.  It will be interesting to see what chef greg whips up for the appies.... They really go all out.  The last tasting we went to they had grilled shrimp and ginger sauce,  smoked salmon with cream cheese and capers in endive,  an antipasto, sirlion skewered and marinated then grilled and tiny spice cakes.

    Who else has a special meal coming up??

    That sounds yummy!  How do you prepare the pecan encrusted talapia?   Hubby loves fish.  Of course he prefers to catch/filet/and prepare it himself, but this time of year you have to compromise and buy fish at the store.  Hubbys bday is next month I would love to try something new and special.   By the way, the soup recipe you gave us for Spicey soup has now become my hubbys very favorite!  He is a light weight when it comes to spicey so I use the mild rotel but he absolutely loves it.  I think I fix it at least every other week, lol!

    This is another unreal easy Bwana Recipe. Using thawed filets of talapia ....

    4 servings =/- depending on how big an eater and what you serve with it..

    1/2 cup of pecan halves.

    4 6oz filets ( you can use catfish on this one as well)

    1 tsp salt

    1/2 tsp garlic powder

    1/4 tsp pepper

    a dash of cayenne

    Put pecans through the foood processor ( or use a knife) but they must be finely chopped.

    Season the fish with the seasonings lightly, then dredge in the the pecans.

    Melt about 3-4 tblsp of butter in a skillet, ( med high heat) put the fish in, cook 3-4 minutes on either side

    till well browned and the fish flakes with a  fork.

    There are dozens of tartar sauces you can use. But another route is a local favorite as closely as I have been able

    to guess the blend.. it is

    1/3 stick of butter

    1 minced green onion

    1 tsp of minced garlic ( fresher the better)

    large slash of rum, ( about 2-3 tbspn)

    Large spash of fresh Lemon juice

    Large splash of OJ

    about a tsp of honey

    and salt to taste

    Melt the butter, saute the oinion and garlic on a med heat,

    reduce to low and whisk in the rest till blended serve warm over the fish

     

    I love this fish with a rice pilaf and coleslaw, or as part of a Southern Seafood Feast

    with Jambalaya, red beans and rice, slaw, even some hush puppies or honey cornbread.

    That spicey soup is a keeper for sure. We cook it a couple of times a year, my hubby hates soups and stews on prinicple

    But he enjoys that one!!

    One of the girls I work with hates nuts in her food too!  Sometimes we fix special treats with nuts in it and she acuses us of doing it on purpose so she wont eat any.

    That is one of the things I love about this dish the nuts are more of a panko crusting texture. I am not fond of the chunky chewy nut types. I love this though since it has the nutty wonderful'ness of pecans ( my favorite nut) without the larger chunkiness.

    The birthday will be awesome despite the crap economy.  The hubs is taking the whole family to my favorite restaurant. Where Escout will prepare hibachi dinners for 10-12 of us ( depending on my brothers) .  He does a wonderful happy, positive show. One that takes you away from the rural South and hard times of late while every one laughs and jokes and the kids try to master their chopsticks.  I will have a couple of cameras there, we will joke , drink sake and be. a. family.What a tremendous gift!

    Pecans are our favorite also.  It just so happens that I have several qt bags in the freezer, a good thing since they are also very expensive now.  That sounds like a wonderful birthday gift!  We will look forward to pictures!

    I have some tortilla encrusted tilapia in the freezer, but it might not count because it came from Schwans. Embarrassed I do put it in the oven myself, so that counts for something. No?

    I really enjoy Schwan's just can't afford it for as big a family as I have.  I cooked 32 pcs od fish, made rice and the marinated salad ( tomatoes, onions and cukes in rice wine vinegar w/ a dash of olive oil and herbs) And there are 4 pcs left over, about 2 cups of rice and  next to no salad. Even the fish hating duaghter ate a couple of pcs.  The Golden Sauce went over huge with adults, the kids tolerated it.  They just are not knee jerk sauce kids thank the stars.

    Gets me out of cooking again till Monday and I will do the stuffed cabbage casserole, Tuesday is the birthday dinner so I don't have to cook that night and Wednesday we are on the road for the Atlanta dog show.  I am doing the smaller  ready made meals at least 4 nights and they have a great restaurant set up at this show.  I do like to cook but when the budget is this darn tight it gets on my nerves. I fed all 10 of us for a week on a 100 bucks last week, arrlin hubby decided to point out that even though the spaghetti was good it was not my A suace... well duh I spend close to 35.00 for my best spaghetti and it will feed the family about 3 meals.

    I have this *thing* about touching raw meat or fish ... or anything that used to be alive.  If it wasn't for Schwans the three guys would hardly ever get meat, which would be OK with me. If I get a chunk of something that's going in the slow cooker, it has to be small enough so that I can spear it with a fork and plop it in there without actually having to put my hand on it. Ick!

    I have never had the luxury of not dealing with things that give me the Ick feeling.  Wish I did but  the family has always been too demanding.  I had one year as a vegetarian and still cooked or prepared 4 different menus daily for 6 people covering everyone's special needs.  When money and time became problematic it was of course my own preference that had to go,  Mine was a choice, the other diets were either medically needed or more easily acquired. I used crumbled tofu one night in a vegetarian lasagna and everyone enjoyed it until I mentioned what it was... then the rest went uneaten. Large families can be a pain.  Now I skip most meals, and rarely eat more than once a day. Like I said the phrase "what's for dinner" is enough to make me want to weep most days. Yesterday I asked for help getting dinner ready. I told my grown daughters where to find the recipe and that they should call if they had questions. I got home from taking my grandson for a mini root canal from a broken filling to find the dinner nearly prepared but wrong.... Hubby can not eat raw carrots,  the grandkids need all the veggies I can put in their meals so I normally cut them smaller and cook them. This way everyone is happy. But Daughters opted to cut them in huge chunks and not precook before adding to the casserole ,  that would lead to DH complaining about having to pick them out and my not caring enough to  cook a favorite myself, Which would spiral to  the grandkids fussing since G'pa did and the adults would then become loud and short tempered with the kids. and the evening would be ruined. So instead of coming in and doing dog's nails I had to unconstruct the casserole, cook the large chunks in the microwave for 10 minutes, re cut the 1/2 boiled cabbage which was to be coursely chopped but instead was only quartered...talk about an ick feeling re cutting partially cooked cabbage yeck!!  The rice which goes in uncooked to prevent it from becoming a starchy mess was thankfully caught before they stuck in in the water to cook ahead of time. I admit I was heated when I had to stop the "help" with dinner and just do it myself. 2 hours later it was devoured by the family, everyone had seconds... I was tired and discouraged so I opted for pork rinds and a beer for my dinner....  hey that was almost vegetarian right??  JK sigh...

    Up until a couple of years ago I never had to actually *cook* anything.  The late DH was a wonderful cook and he did that, while I handled the money and kept the accounts balanced because I'm good at that. Now I find myself having to actually handle bloody chunks of dead critters and I'm not dealing with that too well. Hence my fondness for Schwans, the Costco deli and take-out. I just keep reminding myself that when I finally get moved back to San Diego,  the only one coming with me is Max and he doesn't care whether I cook or not, as long as I share whatever I'm eating with him.

    Gadz can I relate to THAT feeling !!  Won't happen in my life time BUT I so understand.  It is easy having RRS they are cool eating part of my salad as they would be scarffing half of a cheese burger.  I honestly have yet to finish a meal when they were around !!  Tonight thankfully we are all goinf OUT !!!

    We will be at OKKI for hibatchi around 5:00 central the 10 of us can laugh , giggle and eat to our heart's content, I will not have to do one single thing!!   YEAAAAAAAAAAAAAAAH.   Bobby can have steak, the girls will opt for chicken and Tris will most certainly have his shrimp along with Grandma.  I am looking forward to a cold Tsdzo ( sp) beer and later maybe even some sparkling sake... 

    The worst part of the evening??? it is not monster sized meals... so on eor three may still be hungry ... BUT most of us will be full , happy and entertained and there will be pictures!! Heck I am even wearing make up OMG!!!
