    Steak with Peppercorn Sauce???!!!

     Help.  I need a recipe for this TONIGHT (ie. by about 5.30pm,in 4hours!!) or I may be facing divorce!

    The recipes I have looked up require the sauce to be made AFTER the steaks have been cooked, using the juices of the meat.  DH would like me to make the sauce in advance to make dinner quicker to make tonight.  I am convinced that it wont be as nice if I do that.  What do you think?

    after!!! it just tastes better... i dont know about peppercorn sauce, but most sauces are pretty quick to do anyways...

    After.  If he wants to do it another way, then let HIM make the sauce and take the blame if it's less than great.

    After, if you want it to be good.  I guess if you want to you could cook an extra steak earlier in the day and use those juices to make your sauce and use that steak for sandwiches or something.  Now I'm hungry.

    Hmmm I get your predicament... It is best made after BUUUUUUT there are ways to make it work if you really need to hurry the suace... Take any fat trimmings or an extra ( small piece )of Steak.  Sear it in your butter or olive oil ( depending on your recipe) ,  use the pan sear or drippings to develop your sauce. Set aside .  You will get a minimum amount of sauce this way But you can use that to begin service or you can use it adding the sauce made after the dinner to create a quicker meal set up.  ( It is not perfect but darn close)  It would be easiest to have everything else ready to go and then spend the 10-15 minutes on the Steak and sauce.

    I have a really bossy hubby and in the past he has asked for small "adjustments" to make things work differently. Most of the time it did not bother me, I just figured how to meet a new challenge and made it fun for myself.  Once in a while he crossed a line but not often. I kind of miss those days once in a while.  I was considered the "Bree" from Desperate Housewives back then...  I catered for all of the tennis parties for the company, most of the softball invitationals for our Nationally ranked corporate team and all softball away games.  Throwing a party for 50 + for a game or boxing match no big deal. and for 10 years I helped run the Tekillya party for 150 - 250 folks on the beach. I love to cook . So now we do mini Tekillya parties as fund raisers.  Entertaining was my life for about 28 years from the head CEOS to the Janitors and Landscapers.  And all of the factory workers in between. I can not remember a party that had fewer folks attending than invited, as a rule I planned for 5-10 more since there was always a tag along unless we had sold tickets..... ahhh good times....

     Thanks everyone!

     I made him jacket potatoes and told him I would do the steak another night when I had time to do it PROPERLY, when I could make sure we had the ingredients and he wasn't rushing off out to play football.  He was fine with it.

    So today I have bought the steak, some mushrooms and some cream.  I will make the sauce after the steak (which ideally needs to rest for a couple of minutes anyway, right?) and hopefully it will be delicious. Smile
