How fun I have a great Onion soup too... Cooking in an RV easily becomes beans and franks if you are n't careful so I try to find or create never fail standards.
Bwana Bob's French Onion Soup ( Named for the Hubs as He adores FOS )
To serve 4
2 Large Vidallia onions peeled, quartered, then quartered again long ways ( try for skinney strips of onion)
4 cups of Low Sodium Beef Broth, yes you can use boullion but use 6 cubes
2 cups of White Zin whine
1 stick of butter , cut into pats.
I have these little crock pots with handles , made for soups but any solid good bowl will do.
Put Sliced onions and butter in bowl and microwave for 6-8 minutes until the onion is tender.
Add the Broth and wine and cook for 10 minutes on 50 % power. Allow to sit for another 5 minutes or so to incorporate the flavors.
While it is setting up I take any good ructic bread or roll and slice it into a thick slice. Toast it to a nice deep crunch . These are then floated on top of the soup with a small mountain of shredded swiss cheese and put under the broiler to melt.
It is substantial enough to make into dinner with soft rolls and a simple salad. And the cost of every thing is under $8.00 if you have the wine on hand.
