This isi just a wild guess, but I'd wonder first if it was the recent rise in experimentation with whole foods rather than kibbles that are "too rich" (whatever that means). I'm very careful with exposing new dogs to whole fresh fat until they've had time to adjust to a more meat-based diet. A lot of people probably don't know to be careful.
Not wild at all - I'd bet that a HUGH part of the issue. The saying "all things in moderation" comes to mind - and moderation is a relative term in some cases. I know it may not seem so, but I don't advocate any particular type of diet - every dog is different, every dog adapts differently. In the case of fat / protein I think the recommended "one week transition" is going to be too fast when you go to one of the no grain / high protein / higher fat foods. Prancer didn't have any issue at all at first - it took 3 wks for an issue to show up, and even then I'm STILL not sure if it was the fat in her diet or giardia (which is hard to find in a test). Yep - I was stupid - she never had a problem with me switching her canned foods every day, so I figured she had an iron stomach.
"Slow and steady" wins the race and perhaps the "fast track to better nutrition" really IS the underlying reason why pancreatitis seems to be on the rise.
