    Salads

Well it's outdoor time and I hate cooking on a hot stove, and sometimes don't feel like eating much when I'm hot, so I though we could post some salad or BBQ Recipes.

Brocoli and cauliflour salad (a new fav)

    3 cups chopped raw brocoli
    3 cups chopped raw cauliflour
    2 cups shredded chedar cheese
    1 cup cooked chopped bacon
    1 cup coleslaw salad dressing

Mix and put in fridge for 1 hour

This makes a small salad so you could add more

That looks very yummy but I wouldn't think it'd be small.

I'd post some recipes for grilling and salads, bu i dont have amounts for anything.  Its just however much i want to put in, a dash of this, a handful of that.  Thats what i love about cookng, you don't have to be exact with anything.[:)]

I do the same thing. I'll have a recipe, but I add as much as I want. ( except when making a cake) But for making Salads or soups it's ok.

I have a boneless italian chicken breast and a pasta salad recipe.
I take 6 boneless chicken breast and soak them in italian dressing for about an hour in the refrigerator. Then place them on the grill and grill them.

    For the pasta recipe.
1 box of rotini veggie pasta
1 small package of turkey pepperoni or regular pepperoni
    1 bell pepper any color
    2 cucumbers
    2 tomatoes
    1 bottle of italian dressing
Cook the pasta as directed on the box while to pasta is cooking cut up your veggies in bite size pieces. Get a large bowl and add your pasta, veggies, pepperoni and italian dressing and mix them all together.
You can add any veggies you like into this recipe.

    BBQ Zuccinni

2 large Zucc. Sliced into rounds.
    1 garlic
    3/4 cup butter
Seasoning ( I use Mrs. Dash)

Wrap in Foil and BBQ for about 10-20 minutes.

I get way to many Zuccinni in the garden and get sick of zuccini bread.

Here's one that's kind of easy to toss together and doesn't take much time or work.

Grape tomatoes (the little teeny tiny ones)
Little balls of mozzarella cheese (or just slice up string cheese)
A can of whole black olives

Stir together and drizzle with a little olive oil

One of my favorites is a Taco Salad I make.  The only cooking required is the ground beef and I can usually get DH to do anything meat related!

There are no certain measurements, just add as much as you want but just be aware that it gets big fast!  I will list bottom to top!

    Whole black beans
    lettuce
corn (I either use a small can or leftover corn on the cob from the grill on Sunday)
    Avacado-split b/w two of us
    Cheddar Cheese
    Grape tomotoes
    Green Onion
    Ground beef
    Catalina Dressing
Sometimes I add Jalapenos if I want extra spice!

It is also a LF recipe if you use LF cheese, meat and dressing since there are no chips!

I wish i could say that about zuccini angeltrudelle, i love zuccini.  It works well with anything on the grill.  I usually put all my vegetables in a tin foil package with old, butter, and seasoning and then serve it as a side dish.

Too bad i don't grow zuccini, its expensive to buy here.
