    EASY yummy Thanksgiving sides

    I'd love some recipes for such. I don't "do" yams...and I already have the green beans covered. I wanted something different like maybe rice based or the like...
     
    We have so far:
    Le Turkey
    Mashed and Gravy
    Green Beans

    Have you ever tried 3 corn casserole? It is our favorite dish. You combine corn bread mix, eggs, sour cream, drained canned whole kernel corn and creamed corn too. I can post the recipe if you are interested.

    Ingredients:

    1/2 cup butter melted
    2 eggs, beaten
    1 8.5 ounce packaged corn bread/muffin mix
    1 can whole kernel corn, drained
    1 can creamed corn
    1 cup sour cream

    Preheat oven to 350 degrees
    Lightly grease 9x9 dish. (I use my medium sized corningware casserole dish.)
     In a medium bowl, combine butter, eggs, corn bread mix, canned corn, canned cream corn and sour cream. Spoon into prepared dish.
    Bake for 45 minutes or until the top is golden brown.

    You could also try a rice pilaf. Maybe a cheesy vegetable rice dish. Does anyone in your family like broccoli?

    Let me check a couple places and I will post for you if I can.  I usually make most of my holiday stuff from cooking Light and last year I tried a couple exceptional ones.  If you like cauliflower even a little bit I have a great one for roasted Cauliflower with herbs...I think I have a rice one too.  
     
    My in-laws make that 3 corn casserole and it is very good.  I feel bad for DH because somehow his mom and aunt got the impression he LOVES it and he truly hates corn that way but has never had the heart to tell them they have it wrong..he doesn't like it at all.  Every year they say "Jimmy, we made the 3 corn casserole you like so much!"  It totally cracks me up.  Personally, I love it though![:D]

    Actually we all do broccoli aside from my Lily girl who will eat some if I make her lol! My son LOVES broccoli [:)]

    This is super easy, and you can tweak it in a zillion ways

    Mushroom Rice
    1 cup uncooked long-grain rice
    1 (10.5 ounce) can condensed French onion soup
    1 (10.5 ounce) can beef broth
    1 (4 ounce) can sliced mushrooms, drained
    1/4 cup butter  


    1.         Preheat oven to 350 degrees F (175 degrees C).
    2.         Combine rice, onion soup, beef broth, mushrooms and butter in an 8x8 inch casserole dish.
    3.         Bake in a preheated 350 degrees F (175 degrees C) oven for 60 minutes.

    This is pretty incredible stuffing I made last year!!!  This is from cooking light and it is called Sourdough Sausage stuffing..
     
    3 turkey Italian sausage links (about 11 ounces)
    object2=" ?>1 teaspoon olive oil
    object2=" ?>2 cups chopped onion
    object2=" ?>2 cups chopped celery
    object2=" ?>2 tablespoons chopped fresh parsley
    object2=" ?>2 teaspoons dried rubbed sage
    object2=" ?>1 teaspoon dried thyme
    object2=" ?>1/2 teaspoon salt
    object2=" ?>1/2 teaspoon dried marjoram
    object2=" ?>1/2 teaspoon black pepper
    object2=" ?>12 cups (1/2-inch) cubed sourdough bread (about 1 pound)
    object2=" ?>1 (16-ounce) can fat-free, less-sodium chicken broth
    object2=" ?> Cooking spray

    Preheat oven to 350°.
    Remove casings from sausage. Heat oil in a large nonstick skillet over medium-high heat; add sausage, and sauté 5 minutes until browned, stirring to crumble. Add onion and celery, and sauté 3 minutes. Stir in parsley and next 5 ingredients (parsley through pepper). Place sausage mixture in a large bowl; stir in bread and broth. Spoon stuffing into an 11 x 7-inch baking dish coated with cooking spray. Cover and bake at 350° for 15 minutes. Uncover; bake an additional 20 minutes or until golden brown.

    Gina...Orzo is a type of very small pasta about the size of several grains of rice.It is super delicious!!

    Thank you [:)] My kids won't eat italian sausage but I bet I can put another kind in? That stuffing sounds really good. The "orzo" too...now I know what it is lol! Parmasean anything usually floats my boat!
