    Freezer Recipes

    So a friend recently went and spent a ton of money at one of those meal purchase places....6 meals for whatever, all the prep work on site, bag and then take home and freeze.  It got me thinking that I could be getting people together for WAY LESS $$$ and doing the same.  As it stands right now, there are 5 pregnant women in our circle of friends, who could use the ease of pulling it out of the freezer and throwing it in the oven for dinner on any given day, not to mention, I LOVE to cook once and then reheat during the week, but I can barely manage to come up with anything more exciting than baked ziti and meatballs.  It doesn't help that my DH is an incredibly picky eater.
     
    So, I'm thinking of starting a dinner type swap thing.
     
    Anyone have any good casserole or freezer friendly recipes??????

    My mom and I have been talking about doing one of those things and splitting the cost and the food, but getting together with a bunch of friends sounds like much more fun!!     How about Harvest Stew?
     
    I love this time of year and do tons and tons of soups, stews, stuffed peppers, stuffed cabbage, meatloaves,
     
    I love a bowl of piping hot soup on a chilly nite with fresh french style bread...and I've got an easy recipe for that too.
     
    Harvest stew is taters, carrots, small pieces of beef and onion or garlic to start with a touch of water and a little beef base.  Let that bake for a couple hours, then add a quart or more of stewed tomatoes, fat chunks of zuchinni and a little bit of corn if you want.  Let that bake until it's all cooked and the flavors good and blended.
     
    Chili is another good one.  Spegetti sauce.....I make lasagna about once a year....and I'll do 6 or 7 pans at a time and freeze it all.  This is a yummy three cheese lasagna......I always have meatballs in the freezer...they come in really handy for a quick meal......and I've got a number of good chicken recipes that make wonderful casseroles that freeze REALLY well.  Marinara sauce is great to have in the freezer too....and you can use the three cheeses for lasagna and stuff some manicotti tubes or shells, and again, those freeze really well.
     
    If you want some actual recipes, holler......but, I don't measure very specifically.  It's kind of a little bit of this, little bit of that, some this, a pinch of that......

    I do recommend the book, we made great use of it!  My only caveat was some of the recipes could stand a bit more basic seasoning (ie salt and pepper), but it's SO well laid out. Really covers all the bases for you!

    I do a sausage pie that freezes well.

    Take 1 pie crust (either homemade or, if you are lazy like me, storebought), line the bottom of a pie pan or cassarole dish. Fill dish with mashed potatoes and 1 1/2 pound browned pork sausage (sage works best) mixed together. Top with a handful of grated cheese. Bake for 20 minutes at 375F. :)

    i froze the left overs from my last batch of chili...i took it out last night to thaw and am going to melt some velveeta in it and use it to dip tortilla chips in for a snack.
