I just had to check with DH to be sure. He has never used blue cornmeal -- just the regular kind -- so we don't know if the color alters the appearance. What the cornmeal does is make a much more crunchy texture than just regular batter on fried chicken. I don't know if the blue kind tastes different.
Also, he sometimes makes more of the honey sauce so we can dip bites into it, especially when eating the leftovers. It's not spicy -- the ancho just mixes a mild smokiness with the honey. Boy, I'm hungry now!!
