I threw together a quick chicken potpie last night and a few have asked for the recipe. I am not much of a recipe follower and it was
really easy, basically saute veggies you like, throw in some cooked
chicken and chicken broth, flavor with the herbs you like, thicken and
reduce the sauce. Poor in a dish, put the crescent rolls on top. wala!
More specifically:
I sauted some onion, garlic, sweet peppers, frozen mixed veg, baby bella mushrooms in olive oil and then added the remaining meat off a costco rotisserie chicken. I added thyme, black pepper, herbs d'provence (all of those I sauted with the vegetables) and a can of reduced sodium chicken stock. I put a touch of white wine in and a touch of port. I used corn starch to thicken it.
Once thickened to my satisfaction I used refrigerated crescent rolls on the top. I put some garlic sea salt on top (its a mix in a grinder)
Cooked it on 375* until the crust was golden brown and the juices bubbling - about 15 minutes I think.
For the veggies just use whatever you've got in.
I should have reduced the sauce more other than that it was YUMMY!
