    Vegetarian Recipes?

    So I started my vegetarian quest today and now I'm looking for some good recipes.  Any ideas or tips?  I'm eventually going to slip to Vegan for a small while but not for a couple weeks.  I've only been at it now for the morning and finding things hard.  How do you do it?

    I have been a vegetarian for a long time, but I freely admit that I am not a good cook. I eat a lot of pasta (marinara or alfredo sauce), Mexican foods (bean burritos, bean and cheese enchiladas), cheese or veggie pizza, and salads. I also love breakfast foods (pancakes, french toast, waffles, scrambled eggs) any time of the day.

    Morningstar Farms makes a lot of good products, including "crumbles" which is like cooked ground beef. I use that for tacos. You can also add it to marinara sauce, chili, hamburger helper, etc.

    I have one good recipe that I make. I actually make two batches, one with chicken for DH and one for me with just broccoli. He also likes me to add shredded cheddar to his. You can really add anything you want.

     
    CHICKEN BROCCOLI POCKETS

     
    1 c. cut up cooked chicken
    1 lb. sliced mushrooms or 1 c. chopped broccoli

    2 tbsp. melted butter
    2 tbsp. milk
    4 oz. softened cream cheese

    1 pkg. crescent rolls (I like to use the Pillsbury flaky seamless dough sheet, cut into 4 rectangles)
    1/4 c. crushed croutons or breadcrumbs
    1 tbsp. melted butter
     
    Mix or whisk cream cheese with 2 tbsp. melted butter and milk and until creamy. Add chicken and mushrooms or chicken and broccoli. Mix. Flatten out 2 crescent rolls together into a square on a greased cookie sheet. Do the same with the rest. (OR cut seamless sheet into 4.) Put 1/4 of mixture into each square. Fold up corners to meet at top. Pinch together. Brush tops with melted butter and sprinkle crumb mixture over top. Bake at 350 degrees for 20 minutes until golden brown.

    Makes 4 pockets.

    My ex-in-laws are Seventh Day Adventists and strict vegetarians and my ex-MIL just turned 100 last year and is doing great. I attribute a lot of their good health to being vegetarian and eating so healthy. They always had a huge garden and grew their own veggies and fruit, so that helped make things easier. They also used a lot of mock meats and everything always tasted amazing. If I had the cooking talent and resources, I'd cook a lot more vegetarian meals.

    My favorite veggie meal is what I call veggie burritos. I use the no-fat refried beans (or black beans) and put them in a whole wheat tortilla with cheese, lettuce, tomatoes, fat free sour cream and hot sauce. I could eat those 2-3 times a week.

    Johnny, I'm a vegetarian too.  I eat a lot like Janice does.  But, I also eat a lot of nuts and cashews and protein bars too.   I'm not a vegan so I also eat a lot of dairy. 

    My lunches are usually salad and hummus on some sort of low fat bread.  Or breaded eggplant, or rice or pasta and broccoli. 

    I have to really make sure I get enough protein. I use whey protein a lot.  And, I get Cabot's 75% Reduced Fat Cheddar. 

    It's going to be so hard for me to get off the chocolate this week!

    That recipe sounds good! Why not use quorn's vegetarian naked chickens for this? I may try it. :)

     Morningstar is by far my favorite brand of vegetarian food. Though Amy's Organic is a close second. As for recipes I enjoy making veggie taco salad. I wing this one so there's no exact like measurements and such. What you do is brown Morningstar Veggie crumbles(the original kind not the sausage one) and then I put some salsa, I use mild you can use whatever) and mix it all together. After which I let it simmer for a bit and then take it off the burner and let it cool as I cut up some scallions and then I put the 'meat' in a bowl and sprinkle on cheese, my scallions and put some sour cream on top. You can use any veggies you want to though. :)

    No specific recipes (sorry, but, I'm a carnivore thru and thru) but, try looking up Indian food....the main religion (not hindu, but, I forget what its called...fiance will beat me with a wet noodle for forgetting) but, anyways...there are a lot of tasty filling vegetarian curries that use beans and chickpeas, so, you'll get a lot of protein, too. They are YUMMY, too...take that from a formerly skeptical meat eater. Wink

    http://www.worthingtonfoods.com/ - this is the place my ex-inlaws got most of their food from. It's somehow connected to Loma Linda University. The quality seemed to be top notch but I'm not sure what the prices are like. I don't understand why vegetarian products always seem to be so expensive. I'd use more of them if they weren't so pricey. Anyway, the site also has some recipes.

    My favorite vegetarian cookbooks are the first edition of the Moosewood Cookbook (Mollie Katzen) and Wings of Life (Julie Jordan). Both are from people who worked at great veg restaurants in Ithaca (NY). I think Wings of Life is out of print, but you can probably find a used copy somewhere.

    You guys are great!  Thanks for the recommendations.  I'm day 3 in it and it's much easier to do that I first thought.  I mean...how easy is it to throw on some whole wheat spaghetti and veg sauce...LOL....yeah I'm always too busy to cook most of the time.  I also just LOVE LOVE LOVE spinach and especially swisschard....could eat this stuff everyday!  I've always enjoyed raw veggies and dip also.  I haven't been to the store inalmost a week so when I get there I'll have to look up some veggie burgers & tofu.  I think I might have had them before and really liked them.

    Gotta try this for sure....LOVE chili.  The brocolli pockets and buritos will soon follow I'm sure.  Tomatoe Pie...hmmm might be worth trying (minus the bacon).

    I just remembered another of my all time fav dishes thismorning......Hodgepodge.  Give me a bucket of this stuff and that's all I'll eat!

    Well....I'm one week in and still truckin along!  The meat cravings aren't as bad as they were and the caffeine craving are totally gone.....AND I FEEL SOOOOOOOOO GOOD RIGHT NOW!!!!!!   Minus the numb legs.  I pretty well dropped all sugars, all meats are gone and all high fat foods.  So far I've lost.........4.5 pounds!!!  Amazing isn't it.....and I eat probably 10 times a day and am never hungry.

    I tried the brocolli pockets but I kinda messed them up some.....not sure what went on with them.  Gonna have to try again cause anything brocolli I LOVE!  I also tried some veggie burgers.....not too bad....haven't seen any in the stores so.  OH and did I mentions EXPENSIVE!  Holy crap....I couldn't believe the prices.  I'm going to try a veggie lasagna tomorrow so hopefully it'll be tasty.  I found out from a friend that you can bake apples with cinnamin....mmmmmmmmmmmmm good.

    Anyhow...yeah, just wanted yas to know the vegi quest is going pretty good.  I'm really starting to enjoy it.
