    I had a really good leftover turkey recipe that I can't remember.  So.......how about you guys sharing some ideas?

     2 slices of bread

    mayo

    few slices of turkey

    Spread mayo on bread, heat the turkey slightly, arrange nicely on bread, carefully pour some gravy.

    There ya go, yummy sandwich!!

    Turkey pot pie is good and so is King Ranch Chicken.  I posted the latter in a thread recently if you want to search for it.  If you can't find it, I'll copy it again if you're interested.

     Not terribly healthy, but really good...

    TURKEY DIVAN (can use chicken also)

    large bag of frozen broccoli florets

    4 c. sliced turkey or chicken

    1 can cream of chicken soup

    1 pint sour cream (not the low-fat)

    1/2 lb sliced Swiss cheese

    1 jar drained pimentos

     

    Cook broccoli according to pkg.  Butter a 9x13 baking dish. Arrange broccoli on the bottom of dish.  Combine soup and sour cream and spread half over broccoli.  Lay half of cheese over sauce and add sliced turkey.  Spread remaining sauce over and top with rest of cheese and pimentos.  Bake at 400 for 25 minutes or until bubbly. 

    This freezes well, if you want to double it.

    Yes Anne, the gsd's are somewhat limited in the cooked foods I give them.  Raw, ok, but after the reaction to homecooked after we moved South, well, lets just say I'm not anxious for a return to "screaming exits!"

    2 tablespoons butter or marg

     
    1 medium onion, chopped
    2 bell peppers, chopped3 cups cooked, chopped chicken/turkey

    1 10 oz can cream of chicken soup
    1 10 oz can cream of mushroom soup
    1 can Rotel (diced tomatoes w/chilis)
    1 teaspoon chili powder
    1 teaspoon cumin2 cups tortilla chips, crushed2 cups shredded cheddar cheesePreheat oven to 325Cook onion and bell pepper in melted butter till tenderStir in chicken and next five ingredients, stirring occasionallyPlace half the crushed chips in bottom of 9x12 casserole dishLayer with half the chicken mixture and cheeseRepeat layers, ending with cheeseBake, uncovered for 45 minutes or until thoroughly heated.

    2 great soup recipes 

     

    I got the following recipe last year from one of our I Dog friends.  We used turkey after thanksgiving and  it was awesome.  We had this soup several times last year, hubby loves it. 

     

     

    Bwanna's Spicey Chicken Vegetable soup

    In a Large crock pot  or stock pot over the stove.  Great for outdoor camping tooTwo and 1/2 boxes of Chicken Broth (about 10 cups)The shredded meat from 2 supermarket rotisserie Chickens.  (I like the plain chickens for this)Or left over chicken or turkey.1 large can of Rotel Tomatoes with chiles (dice the tomatoes before adding)2 large cans of mixed vegetables diced. (potatoes, celery, carrots like a veg all type)1 can of cornAllow the first ingredients to simmer for all day on low, 3 minutes after cutting. )2 zuchinni cut into course chunks( I have skipped the zuchinni and put in Bell Peppers and Garlic)1 sweet onion cut into large chunksSimmer for an additional 1/2 hourServe with soft rolls .This is also a great way to use left over turkey !! and It freezes extremely well! 

    I have fixed this several times since Thanksgiving!  We love it!

     

    This is a great recipe also;

    TORTILLA SOUP

      

    3-4 Cups of cooked chicken (4 cans) (I use canned chicken it is much easier) (great use of leftover turkey)

    ¼ cup of margarine

    ½ chopped yellow onion (if the onions are small I just put the entire thing

    ½ chopped red onion

    ¾ cup chopped green onion tops (I just use the entire green top)

    ½ chopped green pepper ( again I use the whole thing

    1 **  4-oz can of green chilies

    1 ½  T. cilantro ( I chopped a quarter of the little bunch they come in)

    ½  t. chili powder

    ½  t. white pepper – does not have to be white

    3 cups of chicken stock

    2** 26 oz cans cream of chicken soup

    2 cups of sharp cheddar cheese shredded

    1 quart of  half and half

      

    Large stock pan: All of this barely fits in an 8 quart cooking pot.

     

     Sauté’ onions, peppers and green chilies until tender. When these are translucent I put them in the pot and then simply add the remaining ingredients and then simmer about 30-45 minutes.

    • Turkey Salad
    • Turkey Pot Pie
    • Thanksgiving Sandwich (mayo, stuffing, cranberry sauce, turkey between 2 slices of bread or a sub roll), it's my DH's favorite

    The first three we make the same as we would would chicken.

    The guys favorite thing to do with leftover turkey here is to toast sourdough bread slices, then make a club sandwich with turkey on one level and BLT on the other. And Mayo, of course. Big Smile
