umm, in England Flapjacks are something else indeed.

I am going to say that if your using the same recipe, then either the quality of the ingredients has changed or the way your cooking them has, like your oven, or even the dish your using. I would double check to make sure your oven is consistant in it's heating and your using the same type of baking dish, then check your ingredients. If that does not come up with a workable treat, then try a new recipe.
If you want to share your recipe I would be willing to play with it. Maybe a few other's would too.
