    beef recipes needed

    My husband was awarded 1/4 of a cowBig SmileI bought a small bunk freezer for all of it.If anyone has a steak,roast or ground beef recipe I'd love a few ideas.

    how about goulash? it's a big favorite of mine!

    i dont know the exact quantities (i just go by feel). but basically you fry up (not sure fry is the right term though) big cubes of beef in butter (NOT oil!!). then when the surfaces are all discolored you add onions (just cut them in rings and use lots). then salt, pepper and paprika seasoning. tabasco if you like it spicy. then you can add mushrooms. make sure there's lots of water, cover it and let it boil for about 60-90 min. it's great with some fusilini or even with rice and potatoes... your pick...

    seriously though, you'll probably have to look it up for the quantities, and there are MANY MANY versions of this. but it's a really nice dish. my granma made some killer goulash... *drool*

    You can also take about a 3 lb. chunk of roast and toss it in a slow cooker with a bottle of your favorite barbeque sauce or Russian/French  dressing and leave it on low for 6 hrs. It really doesn't matter what cut of meat it is - it will be so tender it will fall apart.

     Here is a great, VERY EASY one that I got from a fellow idogger a coupel years ago. we use it a lot when we camp.

     

     

    Chewbecca’s  Italian Beef Sandwiches

     

    5 lb. roast (or smaller)
    2 jars of cherry peppers
    one onion (I don't usually do anything but cut off the ends of the onion)
    3-4 cloves of garlic (it's really up to you how much garlic you add)
    Italian seasoning

    Directions: Put roast in your crock pot. Open up and pour in your two jars of cherry peppers. Add onion, garlic cloves (pressed or minced). Fill the rest of the way until right above the roast with water. Sprinkle Italian seasoning completely over the top of the water (until you can't see the roast).
    Cook on low for 8 or more hours. two hours before you are ready to serve and eat, take a slotted spoon and pull out all of the cherry peppers and de-stem them. Put them back in the crockpot. Also, when you're ready to eat, take out the roast and shred it up.

    Thanks for the ideas.I used to make goulash years ago, I think my son would like that..JJsmom06,that sounds great, I might have a hard time with everyone eating those cherry peppers out of the jar before they make it to the crockpotWink I just talked to the butcher today,the beef will be ready next week.I told them to include the soup bones for the dogs.

    Those Italian sandwiches sound great.  When you say Italian seasoning, are you talking about the stuff  that comes in a shaker like salt & pepper or the seasoning mix you use to make salad dressing?

    The teenage me is forced to say....Hamburger Helper!! And lots of it! Yummm!!! LOL

    Homemade chili is always a fave.

    I make killer chili , my stroganoff is a family favorite as well.  I can take cheap cuts of beef and cook them for burrittos or tacos to die for.   The family loves salsbury steak ... I can not stomach most of the Hamburger Helpers.  The fake cheese and sauces make me quesey.  Tacos, tostados and stuffed baked potatoes all fsat meals and very filling if made right.

    Normally I buy a couple of rolls of the leanest hamburger I can and cook it all up with a bit of garlic, salt, diced onion and some pepper, then I vac seal it in smaller bags to use when I need something fast. The current family favorite is Tater Tot casserole easy to make and I double up on everything to save at least one afternoon in the kitchen.

    My Mom attempted to make Tater Tot casserole last week....she lost the recipe and eye-balled it....it wasnt that great....can you post the recipe for me on the Recipe Exchange thred?

    It is pretty basic and freezes wonderfully well!

    This is a Doubled recipe

    5 lb roll of lean ground beef , browned with 1 diced onion ,  2 tbsp Tony Catcheres Cajun Seasoning Drain grease.

    Two large cans of C of Mushroom and two larg cans of c of celery

    2 pints of sour creme

    Finely shredded Cheddar cheese about 4-6 cups

    In a casserole dish layer in the following order..

    seasoned ground beef

    combined soups

    Tater Tots ( I like the crispy kind)

    cheese

    repeat above.

    cook at 350 for about an hour , till heated through

    I hope this is the one you meant , it is the one my family loves.   You can save a step by mixing the cooked beef and soups in a large bowl then layering the rest of the ingredients.
