    Easy Soup Recipes

     Hit me with 'em.  I want to feed Will as much home made good wholesome Stuff as possible.  And now I am making my own bread again, I'd like to make my own soup so I got somethin to dip it in.  Veggie soups preferred, or a fool proof never fail tomato.... anyone?

    Split pea can be as easy as simply simmering a bag of split peas in water and adding salt and pepper, or maybe a bit of grated carrot. 

    Probably my favorite soup is chicken or turkey noodle.  I'd frequently roast a chicken, remove the meat for dinner, and reserve the bones and dripping for soup.  Or simply start with some leftover chicken and perhaps some chicken broth.

    Add water to make the amount you want, and then diced carrot and onion to taste.  Finely chopped parsley (just a pinch or two) is a good addition.  You can use any sort of noodles or macaroni you want - I like wide egg noodles best.  I tend to add a lot of carrots and keep the onion a bit more minimal.  You can also add chopped celery if you like a more dense soup.

     It's easy, economical and filling.

    Three cans of beans (your choice)  I use great northern, black beans and pinto beans.  One can of corn, one can of tomatos, one envelop (typical amount for one batch that serves 4-6) taco seasoning and one package of the HIdden Valley Ranch Dressing (dry).   Open and dump it all in the pan.  Add taco seasoning/ranch dressing  mix  and any amount of water necessary to meet personal preference.  Cook about 20 minutes (next day is great too).  Serve with chips, cheese and sour cream depending on your preference.  You can do the same recipe but leave out all the water, drain all the cans and include 1/4 cup basalmic vinegar and have a great hot or cold side dish.

    A Never fail Tomato that I let the grands help me with. I use 4 cans of Prego Italian seasoned diced tomatoes, put them in the blender or food processor to puree, then add 2 cups chicken stock , ( you can use veg stock but I prefer the chicken)  as my family prefers cream of tomato I add 2 cups of 2 % milk  after I have simmered the soup for 40 minutes or so to incorporate the flavors. Then heat it until the chill is gone from the milk being added.  If it is one of thoes days and we are having dairy issues ( Upset tummies so milk is kep to a minimum) I leave out the milk but  then I appease them by adding a dolop of sour cream or a sprinkle of shreded cheese rather than the heavier milk that will make upset tummies already worse for the wear. Tomatoe soup and grilled cheese is a major staple at our home for the kiddos , one of the best comfort foods.

    The most economical soup I have in my collection is onion soup.  Two large sweet or red onions, sauteed in olive oil and carmelized, once they are completely carmelized add 6 cups of low sodium beef broth, some thyme, salt and pepper and simmer for an hour.  This will feed 4 people for dinner and costs about $4.  The onions are sweet enough that Riley loves them.  For the adults I melt provolone cheese on top of the bowls and serve with toasted rustic bread, just like the restaurant!

    How fun I have a great Onion soup too... Cooking in an RV easily becomes beans and franks if you are n't careful so I try to find or create never fail standards.

    Bwana Bob's French Onion Soup  ( Named for the Hubs as He adores FOS )

    To serve 4

    2 Large Vidallia onions peeled, quartered, then quartered again long ways ( try for skinney strips of onion)

    4 cups of Low Sodium Beef Broth, yes you can use boullion but use 6 cubes

    2 cups of White Zin whine

    1 stick of butter , cut into pats.

    I have these little crock pots with handles , made for soups but any solid good bowl will do.

    Put Sliced onions and butter in bowl and microwave for 6-8 minutes until the onion is tender.

    Add the Broth and wine and cook for 10 minutes on 50 % power.  Allow to sit for another 5 minutes or so to incorporate the flavors.

    While it is setting up I take any good ructic bread or roll and slice it into a thick slice. Toast it to a nice deep crunch .  These are then floated on top of the soup with a small mountain of shredded swiss cheese and put under the broiler to melt.

    It is substantial enough to make into dinner with soft rolls and a simple salad. And the cost of every thing is under $8.00 if you have the wine on hand.
