If you pm me your email addy I will send you a pdf copy of King Arthur flour booklet "Baking with Yeast". I bought it because I got sick of making building blocks aka bread! Found a several techniques I never heard of, my Mom never baked bread so I didn't know about proofing yeast or like Johnny & Tessy mentioned covering dough with a cloth and keeping it warm and draft free when rising. I think that booklet is where I got the tip about  keeping a couple of bay leaves in my flour & corn meal to keep the little critters out and it doesn't leave any flavor behind.
