The Amish really are not very much like the image people have of them outside of Amish country (if you live in a heavily Amish and old order Mennonite area, you get the reality pretty quick). They're human beings just like everyone else, and there are some not so nice ones as well as nice ones. The Amish community is extremely varied and not very much like Little House on the Prairie.
We also need to remember that the "good old days" that we see the Amish as living in were the days before animal abuse legislation, before a common view of pet animals as beloved family members, when animals were simply a means to an end. And the Christian faith of the Amish teaches that mankind has dominion over all animals, to do with what he will for his own benefit. The Amish see nothing at all wrong with using dogs to make money and supplement their incomes. 100 years ago, hardly anyone else would have either. Our view of dogs and other companion animals as somehow special and different from farm animals and desrving of better treatment is a very new concept.
A lot of Amish puppy millers work with English (ie, non-Amish) brokers, who set up websites, arrange for sales, and often put up a "front" for the prospective buyers of a small family farm with just one breeding pair of dogs. The rest of the dogs are down at Jebediah's farm in the barn, away from buyers who might be shocked by such a scene.
