    Been busy here myself as well, tonight history is being made at Churchill Downs, home of the Kentucky Derby. The Rolling Stones are having a concert right on the infield. Alice Cooper is going to open for them so in about 5 min the gates open and my street becomes a circus.
     
    I get to stay home and listen to the Stones live!

    FUDGE!!! Not that he gets it often, but I tried some last year with splenda and he HATED it.....so fudge that I can make with equal for recipes would be wonderful!

    Oops I should of said anything except baking lmao sorry, but what I would do is just make them on holidays and use the same amt  of equal as it calls for sugar that is what I use for pumpkin pies, and for butter, smart balance or smart beat and eggs I use the two whites for every egg the recipe calls for but I usually do throw in one whole egg so if it calls for three eggs, I would do 4 whites and one whole egg. I use canola oil only. Joe was shooting insulin three times a day he has been on pills only for 5 years his other blood work is normal.

    Ya know what tho??  It's YOUR health!  I'll keep sorting the blasted pills for awhile at least, but I do my part with the cooking and baking...he needs to control the eating.  I've been playing food cops for YEARS!!
     
    Is canola a good one to use?  I've read that it is, but I always go with extra virgin olive.  Now on fruit breads, like bannana and cranberry I use fat free plain yogart...zuchinni requires oil.....doesn't substitute well.  Brownies tho, I do the same egg white trick...the dogs get extra yolks for their food.....and on those I use yogart.  Sounds like you and I read some of the same books!

    Apple and PB is sooooo good.  But, a nice sharp slice of cheddar is pretty yummy too.

    Glenda, so glad to hear Todd is having a smooth recovery.  I'm sure it'll be a tough transition to have to think about every single morsel he puts in his mouth.  Reading labels ends up making me feel pretty discouraged.  It's hard to find ANYTHING acceptable if it comes in a box or a bag.  As for him taking on some of the "burden" of his health concerns, that's tough, too.  My friend's DH had bypass surgery 2 years ago, and believe it or not, he still won't adapt his cooking style as recommended.  If SHE cooks, he'll eat the healthy stuff.  But when HE cooks, he's back to the block of butter, tons of fat, too much salt, etc.  He just won't make the life change on his own.  Drives my friend nuts!
     
    P.S. - I love apples and PB - especially if the apple is really crisp!

    Ah, well, I would have made a GREAT ruler wielding nun school teacher!!  I have the disappointed look down to a SCIENCE!
     
    The chex mix is just an example of him thinking he was doing soooo good by putting it in a bowl and not sitting and pigging out from the bag.  So it's not the food choices that he makes so much as the portion control that he's really got to think about.  Nothing at all wrong with A serving of chex mix now and then......nothing wrong with A serving of ice cream now and then......almost every food there is is OK in moderation....and that's the key with this boy...teaching him moderation and how to make the healthy choices.
     
    Its funny because I see him look to me for approval when he gets something to eat...he looks to see if I'm going to scold him or praise him for making the right choice in amount.....and I'm done with the scolding.  It's HIS job now.  But, I'm happy to help and guide when asked, I'm just flat done with being the food cops.
     
    In fairness tho, it's DARNED confusing knowing what to eat.  We had the heart healthy thing pretty good, then it had to become heart healthy/diabetic thing down pretty good before they threw in the BP as well. Canadian bacon has been a staple for breakfast for YEARS.....1/2 a toasted whole wheat muffin, 1 slice canadian bacon and a slice of cheese.....that's been his breakfast for years, with a few other things, but that's the closet we've been able to come to a GOOD diabetic breakfast that is not laden with fat.  The hospital wouldn't let him HAVE canadian bacon because it's too high in salt.  And forget getting low fat stuff, because they add SUGARS to offset the fat and make it still taste decent, so if you buy low fat, you're upping the carbs..... Unfortunately, I think in some cases a person could eat nothing but nuts and berries and if genetics is against them, it's gonna catch them.  I think I may need to go back to college yet again just to learn how to feed this man!

    No doubt about it . Joe really does everything right but that hasn't stopped things from going wrong. However I do think if he hadn't cleaned it up when the poop hit the fan w/ the first heart attack and then subsequent ones, they may have been fatal.
