I have the newest version of photoshop, so I'm not sure if you have the lasso tool. But that works pretty well. You just have to keep your hand steady. The thing that really helps is that if you hold down the shift key you can add to your selection, and alternately if you hold down the alt key you can subtract from your selection. So you don't have to worry about getting it right in just one stroke(if that makes any sense).
If the background is lighter or darker and there is a clear definition between what you're trying to trace and the background then the magic wand tool can help. Again, if you hold down the shift key you can add to your selection, alt subtracts.
Lastly before you copy and paste it, right-click on your selection and feather it. This does a nice blend out to the background. It really helps to smooth out the selection and look less stark.
