Well, everyone, we've had a rough couple of weeks. Its been one thing after another (my fiance's father passed away last week, may he have finally found peace, FH was involved in a car accident the day after, and we spent 6 hours in the emergency room), and the latest is that a week later my fiance landed himself in ICU with Diabetic KenoAcidosis. Hes feeling better now, but after a big scare, and a lot of stress, he may be coming home this weekend.
We need to make some serious diet changes. We're looking at low fat, low carb, low cholesterol, low sugar, high fiber meals, preferable made with healthy, whole foods rather than processed, artificial crap. We're looking at lifestyle change, and only for the better. Exercise, natural foods, etc. etc.
Does anyone have recommendations for Diabetic Cookbooks that aren't loaded with recipes full of artificial sweeteners and processed foods?
I've already found The All Natural Diabetes Cookbook and the fix-it-and-forget-it-lightly slow cooker cookbook for diabetics (we're not home at the same time a lot, so something like this will be perfect for us -- Thanks Kate for the fantastic idea!). Im looking for more like this, or good, tried and true books! Thanks!!!
