    question on cake pans

    I'm making the cake for sons communion. It's a cross, I have never used one of these pans before. Is it best to use spray or crisco to grease the pan.

    I used to do a lot of "designer" cakes and the VERY best thing is a spray called Bakers Secret.  This is formulated especially for baking.  I think Pam or one of the others now has a baking spray as well.  If you do need to grease the pan, be sure to FLOUR it as well.

    One or the other.  Bakers secret is formulated with flour so you don't need to flour when you use that.  And if you aren't making a white cake?  Mix a smidgen of cocoa with the flour for dusting the pan and you won't have a white residue on the chocolate cake.

    I have always used crisco but no flour.  I was taught this by a professional caterer.  Good Luck!

    I used the spray and it came out great. It's all done. Looks ok, but I would love to take a course in decorating. My Aunt did, and made beautiful cakes. I'm going to look into it on Monday, and see how much the course cost. thanks for the help.

    Glenda thats just what this lady taught me in this cake decorating class I took.  It worked for me with out flour.  We all have different ways of doing stuff.

    Good for you Angel.  Actually, if you look for the Wilton books you can teach yourself a LOT.
     
    Firestorm, I wasn't arguing with you.  Simply said that was interesting that someone said NOT to use flour.  When I was a single Mom I had a catering business on the side and did a TON of cakes as well.  That's how I clothed my sons when the ex couldn't be bothered to pay child support.

    Angel, to dress it up a bit, you could sprinkle some coconut or chopped nuts over it. 

    Hey, if you decide to get into this, you could earn some spare money!  Having children at home means birthday cakes!!

    That's what I was thinkng too. My Aunt gave me all of her cake pans and supplies when she gave it up, so I have all this stuff here, just not good at using it.

    I totally agree, if you feel the need to practice, or if you botch any decorations please pretty please send 'em this-a-way and I will gladly dispose of those unsightly practice runs, and I won't tell anybody about it either.  (It's just between us carb lovers, k?)  Jules
