Have you started any obedience training with him? Any experience that you can expose this dog to will help him to adjust to new things in the future. When the stove or ice dispenser goes on, happily ask him for a "sit" or "shake" or anything to get his focus on you, when he complies, even hesitantly, praise and treat him. In fact, there is a treat method called "jackpot" where to break a treat up into tiny pieces and feed it to the dog over a 30 second time period while you are smiling and praising. In other words teach him associate the noises in the house with good things.
On the other hand, don't fuss over him when he's being scared. Fussing is attention and only reinforces his behavior. When he scurries away, call him to you with a happy voice and a wonderful scrumptious treat.
He might going through a "fear period" in his development or he might just be a sensitive dog. My race is always a bit cautious about things, but as time goes by, the time that she takes to assess the situation gets more and more brief and then she looks to me or my DH for approval and she's fine.
