I'm glad that your niece is healing, but I'm worried for this dog. Dogs and toddlers are not something that should be mixed. I know that I do not let any kids approach my dog because kids are unpredictable. They may move their hands or squeal and that in that instant the dog may react and switch to full on prey drive, or as in the case of your dog: full on defensive drive.
To me it sounds like there were alot of warning signs that were ignored. Remember dogs don't have the same language as we do, theirs is based upon subtle posture changes, the height and speed of the tail wag, eye contact etc...
